As soon as I saw this AD on TV, I wanted to know what all was included in the Range & trust me all Classics plus some Classics but Surprise Recipes (that we normally may not make at home) are in store for us!
According to one of the leading Indian Newspaper that had this Print ad says that these Mixes are '...Simple 3 Step recipes that serve mouth watering desserts at home'

The classic Milkmaid has always been at home no matter if it is used for Halwa, Kheer, Desserts, or just as a dip for Quick Dessert Fix!
So looking at the Nestle Brand, these Mixes may just make our lives a bit more Easier & Yummier!

After trying at Spencer’s with no luck, finally found only 4 Mixes (excluding the Kulfi Mix) at Nilgiri’s in Chennai

Some Great Ideas to Plan Your Valentine's!!

Valentine Special- a Healthy Breakfast for the Morning after :)!!!!

Cheese & Onion Omelette:

Whisk Eggs, pinch of Salt
Add Parmesan & Parsley in the Egg Batter & Whisk
Sauté Onions till Translucent
Pour Batter on Pan, Add Onions
When done, fold in Half & Serve Fresh!

Tips:
Can fold Eggs with any filling of choice
Leave some Liquid Egg in the Batter before putting on the Pan as an Omelette cooks even on the plate, so it needs to be served right away fresh from the Pan
In case there is extra liquid left, leave it to settle on the Plate before eating
Eggs are such a good source of Protein in the Morning, is quick & easy to make & can be made either into an Omelette, Scrambled Eggs, Baked Eggs, Soufflé or Frittata

French Crepes:
Simple, Light, Easy to make but look like they took a lot of effort to make!
Nutella Spread
Banana Sliced

Mix Eggs Add some Flour & Whisk
a Free Flowing Batter is very important for this Recipe
Heat Butter in Pan
Pour the Batter
Rotate & immediately Drop back the extra Batter in the bowl straight from the Pan so that a Thin Layer of Crepe stays back on the Pan
Add Bananas, Nutella on top
Fold & Sprinkle Icing Sugar

Tips:
Can make the next Crepe with Lemon Juice & Sugar 
just the same way, one can experiment with the Toppings available in the Next Crepe

Bircher Muesli:
a Traditional Swiss Recipe which is far superior to any Breakfast
Cereal filled with loads of Nutrition for the Day ahead!

Sugarfree Chocolate Plum Cake

Sugarfree Chocolate Plum Cake
Serves

Ingredients:

Sugarfree- 100 Grams
Butter- 100 Grams

Eggs- 2
Honey- 25 Grams
Chocolate- 100 Grams
Flour-125 Grams
Dry Fruits & Nuts (Almonds, Apricots, Figs)- 350 Grams

Method:
In a Large Bowl, Whisk Sugarfree & Butter till Creamy
Add Eggs & Whisk till Smooth
Add the Honey, Melted Chocolate in the Batter while Whisking simultaneously

Add Flour & Mix with Ladle while Folding the Flour in the Batter
Add the Nuts & Dry Fruits & Fold them in as well
Pour in a Round Cake Tin & Bake at 170 Degrees C for about 35 Minutes
Check if done
Serve Fresh with any Seasonal Fruit like Custard Apple Creme (optional)


For Custard Apple Creme:
De seed the Custard Apple, remove the Pulp, add Cream & Blend it into a Smooth Paste

Jump Start Your Day with a Healthy Breakfast!


Cereal with Indian Touch:
In a Bowl, Add a Packet of Cereal with Kesar Pista Flavoured Syrup, Add Nestle Low Fat Blue Packet Milk & Consume Fresh

Dragon Fruit & Yoghurt Smoothie
Dragon Fruit- 1,
Fresh Apricots- 2
Sugar Free Drops- 2
Hung Yoghurt- 2 Tbsp.
Milk- 1/2 Cup
Ice Cubes- 6 -7
Corn Cereal- 3 Tbsp.


Peel & Cut the Dragon Fruit into Chunks
Deseed & dice up the Apricots & put in a blender along with the Dragon Fruit
Put the Sugar Drops, Yoghurt & Milk
Blend Nicely
Add Ice Cubes to cool it rapidly
Add the Corn Flakes & Blend to smooth & silky texture
Serve it in a Tall Smoothie Glass with Cereal as Garnish!


Melon & Kiwi Fruit Smoothie:
In a Blender, Add Nice Pulpy Fruits like Papaya (Good for Weight Loss), Kiwi (Great Source of Vitamin C), Melon Fruits like Cantaloupe/ Honey Dew, Black/Green Grapes, Plums, Milk, Natural Sweetener Syrup & Any Plain Breakfast Cereal & Blend till Smooth
Pour In Glass/Bowl & Serve Fresh!


Tip:
Early Morning Fibre is great for the Digestive System & it also lowers Heart Diseases

Mixed Nut & Oatmeal Muffin:
Whisk Castor Sugar 140 Grams & Soft Butter 140 Grams together till Creamy
Add 4 Eggs & gradually Whisk them one at a time
Add Baking Powder 1 Tsp., All Purpose Flour & Fold Gently
Add Half of the Toasted Nuts (Walnuts Almonds Cashew Nuts)
Keep the other Half of the Nuts for Sprinkling on top of the Muffin Batter just Before Baking
With a Spoon, Fill the Paper Muffin Cups in a Silicon Mould, Sprinkle Oatmeal on Top & Keep to Bake in Oven for   Minutes at   Degrees C
When done, Remove & Serve Warm!

Tip:
Can add Dried Fruits like Cranberries, Raisins, Chocolate Rocks etc. Instead of Nuts in the Muffins



Sweet Banana & Cranberry Pancake:
In Flour 225 Grams, Add Sugar 25 Grams, Sugarfree 35 grams (as good as Sugar1/10 th Calories of Sugar)
Melt Butter in Microwave (this is optional but the Pancakes do turn Buttery Soft with this step!)
Add 2 Eggs in the Flour Mixture, a Big Pinch of Baking Powder & Whisk
Add Melted Butter, Milk 300 Ml Gradually & Whisk
Add Dried Cranberries (this gives the Sweet & Sour Taste with Lots of Energy, Vitamins & Minerals) & Whisk Well
Add a Pinch of Salt & Whisk
Keep the Batter Aside in Fridge
Pour the Batter in the Pan
Add the Sliced Banana on top of the Pancake
Turn the Pancakes when Golden Brown on one side
Add Butter in the Pancake
Serve Warm with Fresh Kiwi Fruit & Papaya Slices!


Tip:
Pancakes are also called Flapjacks in the US as there is Race in many parts of USA where the Runner with the Highest Flips wins these Pancake Races!!

Instant Microwave Egg less Chocolate Cake

International Egg less Dessert Special
Instant Microwave Egg less Chocolate Cake
Serves 2
Preparation Time- 15 Minutes

Ingredients:
Bleached/ Refined Flour (Maida)- ¼ Cup
Baking Powder- ½ Tsp.
Cocoa Powder- 1 Tbsp.
Sour Curd- 1 Tbsp.
Soda Bicarb- a Pinch (about 1/8 Tsp.)
Butter- 2 Tbsp.
Castor/Powdered Sugar- 2 ½ Tbsp.
Pure Vanilla Essence- ½ Tsp.
Water- 2 Tbsp.

Method:
Sieve Flour, Baking Powder, Cocoa powder together & Keep Aside
In a Separate Bowl, Whisk Curd and Soda Bi-Carb
In a Microwave Safe Bowl, Heat Water for about a Minute
Add Butter, Castor Sugar & Vanilla Essence in the Hot Water Gradually & Whisk all Together properly
(If the Butter doesn’t melt the Way it should, can also Microwave the Whisked Batter for about 30 Seconds or till the Butter Melts)
Mix all the Dry Ingredients (Flour Mixture) & Wet Ingredients (Curd, Bi-Carb & Butter Mixture) into a Large Mixing Bowl & Whisk Together
Grease a Microwave Safe Baking Dish with Butter
Transfer the Cake Batter into the Dish & Microwave on High for about 4-5 Minutes or Check to see if a Toothpick comes out Clean
 
Remove & Let it Cool for 5-7 Minutes
Cut in Desired Pieces & Serve Warm Topped with Chocolate Syrup!


Tips:
Microwave the Cake just for 20 Seconds before Serving
Add Few Finely Sliced Nuts in the Cake Batter for a Nutty Cake Chocolate Cake

Crispy Fresh Apple & Oat Meal Crumble

International Egg less Dessert Special
Crispy Fresh Apple & Oat Meal Crumble
Serves 6-8

Ingredients:
Apples- 4 Large, Peeled & Thinly Sliced
Lemon Juice- 2 No’s
Cinnamon Powder- 1 Tsp.
Jaggery (Gur)- 2 Tbsp., Powdered
Light Brown Sugar- 2 Tbsp.
Nutmeg- a Pinch
Grated Lemon Zest-

Method:
In a Mixing Bowl, Mix Apple Slices & Lemon Juice with Hands well enough so that all the Slices get Coated evenly
Add Cinnamon Powder, Jaggery, Nutmeg, Lemon Zest & Mix Well with Hands

For the Oat Meal Mix:
Porridge Oats- 1 Cup
Light Brown Sugar- 2 Tbsp.
Cinnamon Powder- 1 Tsp.
Chilled White Butter- 2 Tbsp., Cut in Cubes

Method:
In a Mixing Bowl, Combine the Oats, Light Brown Sugar & Cinnamon Powder with Hands
Grate the Chilled Butter in the Bowl & make a Crumble Mixture with Hands
Grease a Baking Pan with Butter
Sprinkle some of the Oat Mixture at the Bottom
Add the Apples & Sprinkle the Rest of the Oats Mixture on Top


Settle down the Mixture by Gently Settling the Pan
Keep the Pan in a Preheated Oven to Bake at 190 Degree C for 30-40 Minutes or till the Apple Crumble is Browned & the Fruit Look Goey!
Serve Hot!

Tip:
The High Calories of the Traditional Apple Pie like the White Flour have been put away in this Dish, so this can be had for Breakfast, Lunch or Dinner Guilt Free!!

For a Tang Flavour, can add about a Tbsp. of Marmalade as well in the Apple Mixture just before Baking

Can Add some Extra Grated Butter on Top of the Apple Crumble Mixture before Baking which will give a Nice Colour to the Dish Post Baking
Add the Light Brown Sugar & Cinnamon both to the Apples as well as the Oats for Extra Flavour!

Sage & Pumpkin Risotto

International Vegetarian Main Course Special
Italian Cuisine
Sage & Pumpkin Risotto 
Serves 2

Ingredients:
Arborio/Risotto Rice- 2 Cups
Extra Virgin Olive Oil-
White Onion- 1, Finely Chopped
Fresh Sage Leaves- 3-4
Pumpkin- 800 Grams, Cubed
Vegetable Stock- 5 cups
Salted Butter- 30 Grams
Parmesan Cheese- ½ Cup, Finely Grated
Sage Leaves- Fried for Garnish
Salt- To Taste

Method:
Heat Extra Virgin Olive Oil in Sauce Pan
Add the Onions & Sauté till they turn into Soft Caramelized Brown Color
Add the Fresh Sage Leaves
Add Rice & Mix Well
Add Pumpkin, Vegetable Stock & Mix Well
Give a Gentle Stir around in the Pan
Cover & keep in the Oven to bake in a 200 Degree Celsius Oven
Check to see if Rice is Done, Remove from the Oven
Add Salt, Butter, Finely Grated Parmesan Cheese & Stir till Creamy in Texture
Garnish with Fried Sage Leaves, Finely Grated Parmesan & Serve Hot!

Tip:                                                                            
Tried Risotto for the First Time & wonder if ever I would be able to meet my able help, one of the Popular Australian Cookbook Author & Home Cooking Expert- Donna Hay!
Arborio/Risotto is usually a Short Grain Rice with enough Starch content for a Creamy Finish in this Recipe
Fresh Sage Leaves impart a Woody Flavour to the Risotto
While Baking, the Stock should remain in the Dish, so a Good Cover for the Baking Dish is a Must
Notice that Post baking, some Extra Stock that remains below the Rice, so keep the same as it would be Necessary to achieve a Creamy Texture at the end!

The Food is Hearty as well as Healthy!
The Egyptians eat a lot with family & friends with no less than 20 different Varieties on  the Table

Some Important Spices are an integral part of the Cuisine:
Dukkah
Baharat in Arabic means Spice Mix, includes Black, Green & White Peppercorns, Cinnamon, Cloves & Nutmeg
Coriander
Ghee B L D
Beans Lentils Protein Fava Beans Solit Fava Beans De Skinned
Nuts Spread Almonds Pista Hazelnuts Used on Rice topped with Desserts
Karkade Hibiscus Tea Medicinal Qualities High BP
One of the most important dishes in Egypt is Breakfast
Ful Medames is the Starter & it makes you full for the Rest of the Day
Fava Beans is what any true Egyptian eats mostly in the Meal

Dukkah is one of the National Dishes made up of a Mix of Roasted Nuts, Seeds & Finely Blended Spices

Sesame Seeds- ¾ Cup
Pine Nuts- ½ Cup
Coriander Seeds- ½ Cup
Ground Cumin-  ½ Tsp.Salt- ½ Tsp.
Chilli Powder- ½ Tsp.
Baharat (White & Black Peppercorn, Cinnamon, Cloves & Nutmeg)- ½ Tsp.

In a Pan, Mix Pine Nuts, Coriander Seeds on Medium-High Flame
As the mix starts to colour, Add the Sesame Seeds & Continue to toast until Golden Brown
Pour the mixture into a Mixer
Add Cumin, Baharat Mix, Chilli Powder & Salt
Blend together
Use as Seasoning in cooking or Serve as an Accompaniment with Bread and Olive Oil

Traditionally Dukkah is consumed with Fresh Egyptian Bread dipped in Olive Oil & then in the Nuts Nix
Dukkah is also a versatile Seasoning in the Egyptian Cooking

The Molokhia Leaves have potent Antioxidants like Vitamin E
The stem is removed, finely chopped Leaves along with Garlic & Coriander are made into a Soup which is considered by many as the National Dish


Kushari is a fragrant mix of Rice, Lentils & Pasta served with Onions and delicious Tomato Sauce

Kushari is made with Rice Butter in Pot Water
Lentils & Beans in Water
arranged Layer by Layer


Kushari is a Traditional Egyptian Recipe made with Green Lentils, Pasta & Rice mixed together with Caramelised Onions
It is served with a Tomato based Topping and Finished off with a Crispy Onion Garnish
It is best served Hot with a side of Garden Salad     

1 cup green lentils
1 cup medium grain rice
2 cups small macaroni
2 large onions, thinly sliced
6 tbsp olive oil
1 tsp mixed spices or baharat spice mix
Salt to taste

Sauce
1 small onion, diced finely
2 cloves garlic, crushed
250g tomato paste
2 tbsp olive oil
1 cup water
Salt & pepper
1 tsp baharat spice mix
Chilli flakes (optional)

Crispy Onion Garnish
2 onions, finely sliced
Oil for deep-frying

Over a moderate heat add heat 2 tbsp oil, the rice and a tsp of salt to a medium-size saucepan. Fry for 2 minutes and then add two cups of water. Stir well and bring to the boil. Once the mixture has reached boiling point, lower the heat, cover and simmer for a further 15mins or until the rice is cooked.

Wash the lentils under cold running water until the water runs clear. Add the lentils to another saucepan with two cups of water and bring to the boil. Once tender, remove from the heat, strain and set aside.

Cook macaroni separately in boiling water with a little salt and strain when al dente.

To caramelise the onions, heat remaining oil in a fry pan and add onions. Cook until soft and slightly brown.

Place macaroni In a large serving dish and coat with a little olive oil. Then add the cooked lentils, rice and onions and mix through

For Sauce:
Place a saucepan on moderate heat. Add oil and onion and cook until soft. Add garlic and fry to a pale brown.
Stir in tomato paste, water, salt, baharat, pepper and ground chilli. Lower the heat and leave to simmer for 15-20 mins or until sauce has reduced by half. Remove from heat.

For the Onion Garnish:
Heat sufficient oil in a pan for frying. Add onions and fry until dark brown. Remove from oil, place on absorbent paper towel and leave to cool.

Just before Serving, Sprinkle with Baharat Spice Mix, Pour desired amount of Tomato Sauce & Garnish with Crispy Onions!


Basbousa is a Sweet Semolina Cake with Rose Water & Lemon Syrup is very popular in Egypt and throughout the Middle East

Coarse Semolina- 2 ½ Cups
Self-Raising Flour- ½ Cup
Castor Sugar- 1 Cup
Desiccated Coconut- 1 Cup
Natural Thick Yoghurt- 200 Grams
Unsalted Butter- 200 Grams, Melted
Vanilla Extract- 1 Tsp.
Almonds- 25 No’s, Blanched
Milk- As Needed
For Syrup:
Castor Sugar- 1 ½ Cups
Water- 1 Cup
Lemon Juice- 1 Tsp.
Rose Water- 1 Tsp.
Preheat the Oven at 180 Degrees C for 20 Minutes
In a Bowl, Mix the Semolina, Flour, Sugar, Coconut, Yoghurt, Butter & Vanilla
 If the mixture is too thick, add a little Milk
Spread evenly in a Slightly Greased Baking Tray, dab the edges so it bakes all over, Cover & Keep aside for about 30 Minutes
Cut into the Classic Diamond Shape
Put one Almond in the centre of each Diamond
Bake in an oven at 190°C for 35-40 Minutes until Golden Brown

In a Pot, Mix Sugar & Water until the Sugar dissolves
Simmer for about 5 Minutes
As the Syrup starts to Boil, Add the Lemon Juice & Rosewater
Remove from the Heat and Set Aside to Cool
Pour the syrup over the Hot Cake & Keep it aside till it reaches Room Temperature
Serve Fresh!

Tomato-Basil Pilaf with Wild Mushroom Ragout

International Vegetarian Main Course Special
Italian/Mediterranean Cuisine 
Tomato-Basil Pilaf with Wild Mushroom Ragout
Serves 2

Ingredients:
Fresh Tomato- 1, Finely Chopped
Basmati Rice- 1 Cup Raw Weight/200 Grams, soaked in Water
Garlic- 3-4 Cloves Chopped
Onion- 1 Medium, Finely Chopped
Bayleaf- 1 to 2
Caraway Seeds (Shahi Jeera)- ½ Tsp.
Black Peppercorns- 4-5
Extra Light Olive Oil/Olive Pomace Oil- 1 Tbsp.
Fresh Basil Leaves
Salt & Pepper- For Seasoning

Method:
In a Sauce Pan, Heat Oil; add Onions, Black Peppercorns, Shahi Jeera, Bay Leaf & Sauté
Add Freshly Grated Garlic, Tomatoes & Tomato Puree & Sauté

(This is the Base for the Pilaf)

Add Pre Soaked Rice, Salt, Pepper, Fresh Basil Leaves, Vegetable Stock & Sauté
Once the Stock starts Rapid Boil, Turn to Low Flame & Let it simmer
Cook till all Liquid is evaporated for about 10-12 Minutes

Tip:
Butter or Margarine like Nutralite can be used instead of Olive Oil
Basil should remain Fresh & try to avoid the Colour change, so for the same add Basil towards the end
All the juices should Mix Well with the Rice & Intensify the Flavors
Garnish with Fresh Basil Leaves



Wild Mushroom Ragout

Ingredients:

For Ragout:
Olive Oil-

Garlic
Onion- 1 Medium, Finely Chopped
Button Mushrooms- 4, Finely Sliced
Dehydrated Wild Mushrooms- ½ Bottle

White Wine-

Thyme Flowers-
Butter-
Mustard-
Salt & Pepper- 


Method:
In a Bowl, soak the Wild Mushrooms in Water
In a Sauce Pan, Heat the Water-Wild Mushroom Mix & Simmer for about 5-6 Minutes
When done, Strain & Roughly Chop
Keep the Boiled Mushroom Stock aside

For the Ragout:
Heat Olive Oil in Pan, Add Onion, Garlic & Sauté
Add Mushrooms, Thyme Flowers, Wild Mushrooms & Sauté
Add White Wine, Wild Mushroom Stock & Mix Well
just towards the end, add a Hint of Fresh Cream, Butter, Mustard, Salt & Pepper & Mix Well

Tip:

English- Mushroom

Hindi- Dhool ka Phool/Guchhi/Khumb/KukurMutta
Odiya- Chhatu
Telugu- Puttagodugu

I have used Organic Basmati Rice here but any regular long grain Basmati Rice can be used
Dehydrated Wild Mushrooms are very strong in their Flavor
Using equal quantities of Olive Oil & Butter is always a great combination
Also, Mushrooms & Thyme Flowers are an Excellent Combination
Add just a little Garlic in the Ragout as the Pilaf already has some of it
