Simple Masala Egg Stir Fry (Anda/Kodiguddu Bhurji)

Indian Eggetarian Breakfast Special

Simple Masala Egg Stir Fry (Anda/Kodiguddu Bhurji)
Serves 2

Ingredients:
Eggs- 4 No’s, preferably Grain Fed Brown Shelled 

Extra Light Olive Oil/Olive Pomace Oil- 1 Tsp.
Cumin Seeds (Jeera)- ¼ Tsp.
Onion- 1 Small, Finely Chopped
Green Chillies- 3 No’s., Finely Chopped

Red Chilli Powder- ¼ Tsp.
Coriander Powder-
Cumin Powder-

Salt - ¼ Tsp.
Black Pepper Powder (Freshly crushed) - ¼ Tsp.
Garam Masala- ¼ Tsp. (optional)
Fresh Coriander Leaves- 2 Tbsp., Finely Chopped

Rich Multi Grain/Whole Wheat Loaves



Method:
In a Mixing Bowl, Crack the Eggs in the Bowl & Whisk them till Fluffy


Heat Oil in Wide Non Stick Skillet (Tawa) on Medium Flame
Add Cumin Seeds & Sauté till Seeds Crackle
Add Onion & Green Chillies
Add Red Chilli Powder, Salt, Black Pepper Powder, Coriander Leaves & Mix well
Gently Pour the Egg Mixture on the Tawa
Mix in properly with the Sauteed mixture in the Pan till Light Brown on Low Flame

Serve Fresh with the Bread/Loaf!







Tips:
It is Essential to Carefully Whisk the Eggs just enough for the Fluffy Texture
This Bhurji tastes Great with Rice, Phulka or just by Itself!

Rich Multi Grain/Whole Wheat Bread/Loaf & Eggs definitely are a great Combination to Kick start the Day!

Variations:
Can Add Finely Chopped Tomatoes as per Taste
For a South Indian Taste, can add ¼ Tsp. Turmeric Powder & Curry Powder instead of ¼ Tsp. Garam Masala in the Whisked Eggs

Cyprus & Cypriot Cuisine



Cyprus

Lania lies in the Northern Wildland built at the foot of Mount Troodos on the main Limassol to Troodos road
also called an Artist's Village




Cypriot Halloumi Cheese made from Goat's or Sheep's Milk & is believed to be an Aphrodisiac
for the Handmade Cheese, the ratio depends like 60:40 Goat's:Sheep's
Handmade baskets from the mountains
cheeses are flipped & pressed in the baskets

Whey mixture prepared with salt
Ruby straws scrapper ladle
scopped into cylindrical plastic mould
drained overnight & hung to dry for few weeks
young Haloumi placed on grease proof paper & put in the boiling Whey to cook for 90 minutes
inside the folded Cheese (like Pita Bread), Salt, dried Mint Leaves are stuffed

Traditional Cypriot Pizza Pie:
Combine Flour, Olive Oil, once mixed slowly Water to form smooth dough
dough left to stand
Haloumi cheese cut in cubes, Fresh Mint
kneaded with the dough until combined
spread across a large Pita tray & baked in Moderate oven till 45 Minutes till Brown & served with Tea or Coffee

Pan Fried Grilled Haloumi with Fig Syrup:
Dried Baby Figs Coriander Seeds Cloves Cinnamon Vanilla Slit Balsamic Vinegar Simmered together till a Thick Syrup
Fresh Watermelon Honey



In Cyprus, the Carob Syrup is known as Cyprus’s Black Gold & is widely exported

Carob Juice is traditionally consumed during the Islamic month of Ramadan
It also is believed to be an Aphrodisiac


Flower Infused Fresh Honey is believed to be great for Cough/Cold etc.




Mezze: Weed Pickled with Vinegar & Olive Oil







Fresh Strawberry Salad with Halloumi Cheese:

In a bowl, drizzle the sliced strawberries with a good splash of balsamic vinegar, the lemon juice and some Extra Virgin Olive Oil
Season with salt and pepper. This will draw out and flavour the lovely strawberry juices
Preheat a large non-stick frying pan to medium hot and add a splash of olive oil
Press a basil leaf on to each slice of Halloumi. Place the slices, leaf side down, in the frying pan and fry for a minute
Turn over carefully and fry for another minute until the Halloumi is light golden and crisp
Put the mint, the rest of the basil leaves and the Salad Leaves into the bowl with the strawberries and toss together
Pile some of the strawberry mixture in the middle of each plate and drape the speck over the top
Finish with more Salad Leaves
To serve, drizzle with Balsamic Vinegar and Extra Virgin Olive Oil
  

Cypriot Smoked Pork (Lounza) prepared in a Traditional Way in an Deep Bottomed Clay Oven



Spinach and Feta Parcels:


Ingredients:
4 tbsp Olive Oil
1 kg Spinach, chopped, stalks discarded
1 bunch of Spring Onions, finely chopped
Salt, and freshly ground pepper
2 tbsp Parsley, chopped
½ tsp Nutmeg, freshly grated
100 g Feta Cheese, chopped
2 Eggs, lightly beaten
350 g Filo Pastry, thawed if frozen
50 g Butter, melted

Method:
1. Preheat the oven to 200°C/gas 6.

2. Heat the olive oil in a heavy-based saucepan. Add in the spring onion and fry gently until softened but not browned, around 2-3 minutes.

3. Add in the spinach and fry, stirring, until the spinach begins to wilt.

4. Cover and cook over a low heat for 5 minutes, stirring now and then.

5. Set the spinach aside to cool slightly, then season with salt and freshly ground pepper.

6. Mix in the parsley, nutmeg, feta cheese and eggs.

7. Cut the filo pastry sheets into 32 pieces, each 15cm square.

8. Brush four of the filo squares with a little melted butter. Stack the filo squares on top of each other, forming a star shape.

9. Repeat the process, making 8 filo star shapes in all.

10. Take a generous tablespoon of the spinach mixture and place it in the centre of the filo star. Fold the filo around the spinach mixture, forming a cracker-like top to the filo parcel.

11. Repeat the process, filling the remaining filo stacks.

12. Place the filo parcels on a greased baking sheet and brush with melted butter.

13. Bake for 20 minutes or until golden brown. Serve warm or cold.




Semolina Cake:
Sugar
Secret ingredient Mastica Powder Edible Gum is good for health
Whole Pistachios
Water
Whisk the Dough
Layer on Baking Tray
Brush with Sugar Syrup
Cut in Squares
Bake again in Oven for 10-15 Minutes

On the Hot Cake, Pour the Cold Sugar Syrup

Semolina Almond Cake:
Rose Water/Orange Blossom Water/Mastichi

Cookies:

Chocolate Orange Cake:
Wash Orange, Cut in Quarters with Skin, Put in Food Processor for Coarsely Chopped, Keep Aside

In the Processor, Add Eggs 2, 1/2 a Glass Sugar, Keo Cypriot Brandy (Optional) Olive Oil 1/2 Glass
Mix all, to this Mix Add 1 Glass each of Wholemeal Flour & Village Unbleached White Flou, 1 Tbsp Cocoa Powder 5 Tbsp Drinking Chocolate & Mix all together
Pour out in a Bowl
Add Walnuts in the Cake Batter & Mix Well
Pour in a Cake Tin 180 Degrees C for about an Hour
last 10 Minutes need to be observed
Spear the Cake to check
Pour the Cold Syrup (1/2 Glass Sugar 1 Glass Water Boiled to make the Sugar Syrup) on the Hot Cake

For Moorish Glaze:

Butter, Condensed Milk, Cocoa Powder & Drinking Chocolate
3/4 Pack of Butter Melted take off the heat
Add 5 Pouring Tbsp of Condensed Milk & Whisk
2 Tbsp Cocoa Powder & 5 Tbsp of Drinking Chocolate
Mix Well for a thick consistency

Garnish with Orange Slices & Walnuts!!

 
Sesame Seed & Anari Parcels:

Anari (Anthotyro or Myzithra) is made from the by-product of Halloumi Cheese and contains Sheep/Goat’s Milk with a Creamy, Soft texture
a local white Unsalted Haloumi Cheese similar to Ricotta Cheese

Honey, Toasted/Non Toasted Sesame Seeds
Filo Pastry brushed with Extra Light Olive Oil
Bake for 20-25 Minutes at 180 Degrees C

Strawberry Layered Cake for Me :D:)!!!!



Valentine Special- a Healthy Breakfast for the Morning after :)!!!!

Cheese & Onion Omelette:

Whisk Eggs, pinch of Salt
Add Parmesan & Parsley in the Egg Batter & Whisk
Sauté Onions till Translucent
Pour Batter on Pan, Add Onions
When done, fold in Half & Serve Fresh!

Tips:
Can fold Eggs with any filling of choice
Leave some Liquid Egg in the Batter before putting on the Pan as an Omelette cooks even on the plate, so it needs to be served right away fresh from the Pan
In case there is extra liquid left, leave it to settle on the Plate before eating
Eggs are such a good source of Protein in the Morning, is quick & easy to make & can be made either into an Omelette, Scrambled Eggs, Baked Eggs, Soufflé or Frittata

French Crepes:
Simple, Light, Easy to make but look like they took a lot of effort to make!
Nutella Spread
Banana Sliced

Mix Eggs Add some Flour & Whisk
a Free Flowing Batter is very important for this Recipe
Heat Butter in Pan
Pour the Batter
Rotate & immediately Drop back the extra Batter in the bowl straight from the Pan so that a Thin Layer of Crepe stays back on the Pan
Add Bananas, Nutella on top
Fold & Sprinkle Icing Sugar

Tips:
Can make the next Crepe with Lemon Juice & Sugar 
just the same way, one can experiment with the Toppings available in the Next Crepe

Bircher Muesli:
a Traditional Swiss Recipe which is far superior to any Breakfast
Cereal filled with loads of Nutrition for the Day ahead!

Mexican Cuisine


Mexican Cuisine- Guilt Free Fiesta @ Home

Essential Ingredients:

Corn Maize

Avocado is used in Salsas, Guacamole etc.


Some of the main Beans/Frijoles Types used are Pinto, Black Turtle Beans (used to make Refried Beans)


Annatto or Achiote is sold as a Pressed Block which basically is a Mild Earthy Flavoured Red Seed
It is used in Cooking for both Colour & Flavour but Surprisingly also as a Dye for Fabrics

like a Spice Rub is used to make a Marinade for Yollo Pollo Yucatecan Chicken
Heat Olive Oil Onions Tomatoes Slices Put in Silver Foil along with the Chicken
Prawns cooked on Hot Plate with Olive Oil with little time on each side
Served on a Corn Tortilla with Fresh Onion Rings, Dried Oregano, Sea Salt


Chillies are the main Building Block/Flavoring Agents to Perk up the Mexican Food

In most Dried Chillies, the Stem & Seeds are removed, placed in Warm Oil till the Color changes after which they are Simmered in Hot Water for about 10 Minutes

Ancho Chilli- available both in Fresh & Dried
Dried ones are Mild & Sweet, used after Deseeded & dissolved in Hot Water
Fresh ones are called Poblano, looks like a   Giant, Pointed Green Capsicum 


Guajillo Chilli- has a Tough, Leather like Skin which is the reason they go in Oil longer for Flavouring


Habanero Chillies are an Extremely Hot variety of Chilli

Pasilla Chill- has a Smoky Flavour

 

Jamaican or Hibiscus or Wild Rosella Flowers
National Tea High in Vitamin C








Soup is Served with Fried Corn Tortilla, Feta Cheese Cream, Lime Juice, Chillies


Tamales made with Corn Flour & mixed with Lard
Rich Sauce with Ancho Chilies
Cooked & Mixed with Shredded Chicken
Smeared over Corn Husks, Ready to Steam
Best Comfort Food from Mexico!






The Dishes can be made in an interactive manner by just quickly filling up the Tacos, Tortillas with Veggies, Cheese, Cream etc.

Locals frequent Market/Marcado for their daily shopping

The Cuisine pretty much can satisfy the Delhi Palate as it has Tomatoes, Coriander, Garlic, Chicken & most importantly Rajma!
The Restaurant’s version of the Tacos is irreplaceable at home as apart from being deep fried the original Taco Corn tortillas are made from specially treated Dough Flour called 'Masa Harinaa' which is made from Dried Corn that has been soaked in limewater and finely ground

Special Breakfast items may have as many as 10 different Egg items on the Menu
Tortilla with Sunny Side up Eggs Refried Beans on side, Scrambled Eggs with beef Meat & Salsa,
Dry Tortilla with Sunny Side up Eggs Peas,

Cilantro, Red Onion, Tomato, Fresh Lime, Guacamole, Green Chillies, Peppers are the basic vegetables used



Spinach Tortillas (The market version of the Spinach Tortillas has Wheat Flour, Raising Agent, Emulsifier, Colour etc.)
Make the Spinach Tortilla dough by Mixing Chopped Spinach, Atta, Salt & Black Pepper, Olive Oil & Water

For Filling:
In Paneer, Add Minced Garlic, Salt, Taco Seasoning, Lime Juice & Mix Well
Spray pan with Oil Add the Mix & Sauté
Put the Filling in a Crisp Lettuce Cup, top with Sour Cream, Salsa & Fill the Taco Shell

Enchiladas:
In a Bowl Add Paneer, Salt, Red Chilli, Lime Juice & Mix Well
Add Minced Garlic, Red Wine, Mix Well & Keep Aside to Marinate
Add fresh Oregano just before stuffing this Filling into the Enchilada

For the Enchilada Cream (Originally is made with lots of Cream):
In a Grinder, Blend the Charred Onion, Garlic, Deseeded Green Chillies, Coriander & Tomato Puree
Add Salt & Fresh Black Pepper
Spray Pan with Oil, Pour the Sauce & Let it Simmer
Spray another Pan with Oil & Add the Paneer Filling
Add Honey, Tobasco, Fresh Oregano Leaves & Mix Well

Layer the Tortilla with Sauce
Spread the Cooked Paneer, Wrap it both sides & Place it on a Baking Dish
Spread the rest of the Sauce on top, Sprinkle both the Freshly Grated Cheeses,
Keep it to bake in the Oven till the Cheese melts


Guilt Free Sour Cream:
Mix the Hung Yoghurt for 8 Hours/ Overnight
Shredded Red Capsicum, Red Capsicum, Jalapeno, Rock salt & few Tabasco Dashes
Serve it with Enchiladas!

Stuffed Poblano Peppers:
Wash, Deseed the Poblano Peppers
Add Onions Finely Chopped, Garlic, Red Bell Peppers & Saute
Add Salt, Cumin Powder & Cook till Tender
Let this Mixture Cool
In a Bowl, Add Cooked Beans, Cooked Rice, Cheddar Cheese, Roasted Tomatoes, Mix Well with hands
Stuff the Chillies with the Mixture & arrange on a Baking Tray
Sprinkle Cheese on top & Keep it to Bake in the Oven for about at Degrees

  

Mole Poblano is made traditionally with Turkey or can be replaced with Chicken 
Dark Chocolate



World's second most expensive spice are Vanilla Pods which are available very cheap in Mexico


Creme Caramel (traditional Mexican Flan):

Make Caramel (Picano) with Sugar 1/2 Cup & Water 3 Tbsp. on gentle heat for 10 Minutes till a nice Amber color reaches which is then poured in a Cake Pan & evenly coat (top layer)

Heat Condensed Milk 2 Cans & Whole Milk equal Parts, add Lime Zest 3 & the scraped whole Vanilla & Pods, let it Simmer for 15 Minutes 

Whisk 6 Eggs & pour Hot Milk mixture in the whisked Cold Eggs & Whisk (to raise the temperature)
then pour the rest of the mixture through a Strainer 

In a Hot Water Bath filled till half length of the Tin & place the Cake Tin & Bake in Oven for 45 Minutes on 350 Degrees
Put in Fridge for 4 Hours
Turn upside down carefully & Serve Fresh!
