Simple Masala Egg Stir Fry (Anda/Kodiguddu Bhurji)

Indian Eggetarian Breakfast Special

Simple Masala Egg Stir Fry (Anda/Kodiguddu Bhurji)
Serves 2

Ingredients:
Eggs- 4 No’s, preferably Grain Fed Brown Shelled 

Extra Light Olive Oil/Olive Pomace Oil- 1 Tsp.
Cumin Seeds (Jeera)- ¼ Tsp.
Onion- 1 Small, Finely Chopped
Green Chillies- 3 No’s., Finely Chopped

Red Chilli Powder- ¼ Tsp.
Coriander Powder-
Cumin Powder-

Salt - ¼ Tsp.
Black Pepper Powder (Freshly crushed) - ¼ Tsp.
Garam Masala- ¼ Tsp. (optional)
Fresh Coriander Leaves- 2 Tbsp., Finely Chopped

Rich Multi Grain/Whole Wheat Loaves



Method:
In a Mixing Bowl, Crack the Eggs in the Bowl & Whisk them till Fluffy


Heat Oil in Wide Non Stick Skillet (Tawa) on Medium Flame
Add Cumin Seeds & Sauté till Seeds Crackle
Add Onion & Green Chillies
Add Red Chilli Powder, Salt, Black Pepper Powder, Coriander Leaves & Mix well
Gently Pour the Egg Mixture on the Tawa
Mix in properly with the Sauteed mixture in the Pan till Light Brown on Low Flame

Serve Fresh with the Bread/Loaf!







Tips:
It is Essential to Carefully Whisk the Eggs just enough for the Fluffy Texture
This Bhurji tastes Great with Rice, Phulka or just by Itself!

Rich Multi Grain/Whole Wheat Bread/Loaf & Eggs definitely are a great Combination to Kick start the Day!

Variations:
Can Add Finely Chopped Tomatoes as per Taste
For a South Indian Taste, can add ¼ Tsp. Turmeric Powder & Curry Powder instead of ¼ Tsp. Garam Masala in the Whisked Eggs

Simple Masala Egg Omlette Sandwich (Anda/Kodiguddu Attu)

Simple Masala Egg Omlette Sandwich (Anda/Kodiguddu Attu)
Serves 2

Ingredients:
Egg- 4 No’s
Onion- 1 Small, Finely Chopped
Green Chillies- 3 No’s., Finely Chopped
Extra Light Olive Oil/Olive Pomace Oil- 1 Tsp.
Cumin Seeds (Jeera)- ¼ Tsp.
Red Chilli Powder- ¼ Tsp.
Salt - ¼ Tsp.
Black Pepper Powder (Freshly crushed) - ¼ Tsp.
Garam Masala- ¼ Tsp.
Fresh Coriander Leaves- 2 Tbsp., Finely Chopped

Rich Multi Grain/Whole Wheat Bread- 4-6 Slices 
Method:
In a Mixing Bowl, Add Onion & Green Chillies
Crack the Eggs in the Bowl & Whisk them till Fluffy
Add Red Chilli Powder, Salt, Black Pepper Powder, Coriander Leaves & Beat well

Heat Oil in Wide Non Stick Skillet (Tawa) on Medium Flame
Add Cumin Seeds & Sauté till Seeds Crackle
Gently Pour the Egg Mixture on the Tawa
Cover & Cook on Both Sides till they turn Fluffy & Light Brown on Low Flame

Serve Hot Wrapped inside 2 Bread Slices with Tomato Ketchup!

Egg less Whole Wheat Bread Pudding

Egg less Whole Wheat Bread Pudding
Serves 2

Ingredients:
Whole Wheat Bread Slices- 4
Milk- 220 ml or 1 Cup
Sugar- 4 Tbsp.
Butter- 2 Tsp.
Cherries, Tutti Frutti, Chocolate Syrup- For Garnish 

Method:
Toast the Bread in a Pop Up Toaster or on a Flat Non Stick Tawa
Spread Butter and sprinkle the Sugar evenly on top
Roast the Bread again on a Non Stick Flat Griddle (Tawa) or
Microwave it for 30 Seconds
The Sugar and Butter mixture will properly mix and should get absorbed into the bread

Boil Milk and add some Sugar to it
Stack the Bread Slices in a container and pour the Milk on top
Pour the Milk gradually so that it is absorbed by the Bread

Garnish with Cherries and Chocolate Syrup
Keep the dish in the Freezer and Serve Chilled!

Tips:
Can use Multi Grain Bread as well

Organic Grilled Whole Wheat Pizza

Organic Grilled Whole Wheat Pizza
Serves 2

Ingredients:

For Toppings:
Onions: 1/2 cup, finely sliced
Green Bell Pepper: 1/2 cup, finely sliced
Red Bell Pepper: 1/2 cup, finely sliced
Yellow Bell Pepper: 1/2 cup, finely sliced
Baby Corn: 6 No's., finely sliced
Zucchini: 1 small, finely sliced
Tomatoes (optional): 1 medium, finely sliced
Extra Virgin Olive Oil- 1 Tbsp.

Pizza Base:
Whole Wheat/Multi Grain Pizza Base- 2 No's.
Mozzarella Cheese- 1 to 2 Cups
Black Olives: 8 No's., Finely Sliced

Dried Italian Seasoning
Jalapenos (optional): 3 nos

Pizza Topping/Spread- 2 Tbsp.
Red Chilli Flakes


Method:
In this recipe, we have used a Microwave with Grill option to make the Pizza at home

Apply some olive oil on the back of the Pizza Base, and grill it for 3 to 4 minutes facing this side

In a pan, add some Olive Oil and roast the Bell Peppers, Onions, Zucchini, and Baby Corn, saute til you get the desired roasted color and keep aside


(We can directly grill the vegetables in the microwave, but it will take more time)

Meanwhile, on the Pizza Base add the Pizza Spread and spread it evenly

Then add about 1/4 cup of Mozzarella Cheese on top of the spread

Add the Grilled Vegetables, Olives, Jalapenos, and a small amount of Italian Seasoning to the base


On top of the Pizza Base, add the 1/2-1 cup of Grated Mozzarella Cheese

Bake the Pizza for 7 to minutes

Slice it with a Pizza Cutter and serve hot with Chips/Garlic Bread and a chilled Soda!
