Watermelon, Feta & Black Olive Salad
How to Utilize a Forgotten Potluck’s Leftover Food!

Watermelon, Feta & Black Olive Salad
Serves 2
Ingredients:
Watermelon- 1 Medium
Feta Cheese- ½ Packet, Crumbled
Cherry Tomatoes- Halved
Spring Onions- Finely Sliced
Pitted Whole Black Olives- Finely Sliced
Oregano Leaves-
Green Pumpkin Seeds-
Chat Masala-
Sugar- a Pinch
Fresh Lemon Juice-
Salt- A Dash
Freshly Crushed Black Pepper-
Fresh Parsley- Leaves Picked
Method:
Cut Watermelon into Equal Length Slices
Place the Watermelon Slices in a Plate, Drizzle
Extra Virgin Olive Oil, Soya Sauce, Himalayan Black pepper & Keep
Refrigerated Covered with Plastic Wrap
In a Salad Mixing Bowl, Mix Cherry Tomatoes, Spring
Onions, Feta, Black Olives & Oregano Leaves
Squeeze some Lemon Juice, Drizzle Extra Virgin Olive
Oil, Black Pepper, Fresh Parsley Leaves
Add in Salad Bowl & Mix
Heat Olive Oil in pan
Add Green Pumpkin Seeds, Add Chat Masala, Sugar
(sweet and chatpata) when popping starts switch off & take in a bowl
Take the Watermelon out of the Fridge & Layer
the Pieces on a Serving Plate
Add the Salad on Top of the Watermelon Pieces
Sprinkle Toasted Pumpkin Seeds & Serve
Immediately!
Tips:
It is very important to use good Quality Fresh
Tomatoes are a must
Good Quality Feta Cheese should preferably be used
but instead of the Crumbled Feta, can use our own Indian Feta in form of
Crumbled Paneer
Lemon Juice needs to be used carefully as the Feta
Cheese already has Sour Taste

Grilled Feta Greek Salad

Grilled Feta Greek Salad- Classic Greek Salad with a
Twist!
Serves 2
Ingredients:
Cucumber- 1
Tomatoes- 2
Red Onions- 1 Medium
Black Olives- 5
Fresh Mint Leaves- 1 Sprig
Fresh Parsley Leaves-
Fresh Feta Cheese-
For Dressing:
Olive Oil- 2 Tbsp.
Red Wine Vinegar- 2 Tbsp.
Honey- 1 Tbsp.
Sea Salt- To Taste
Freshly Cracked Black Pepper-
Method:
Whisk together Olive Oil, Red Wine Vinegar, Honey, Sea Salt & Black
Pepper
Next Slice Cucumber, Tomatoes & Place on a Serving Plate
Sliced Red Onions, Olives, Mint Leaves & Flat Parsley Leaves
Now Slice Feta into Big Rectangular Slices & Brush with Oil
Heat Non stick on High Flame & Fry until Golden & Crunchy
Cut in Half & Place on Salad
Just before Serving, Spin the Dressing & Serve

Classic Greek Salad Ingredients like Cucumbers, Tomatoes, Olives, Fresh Burst
of Parsley & Mint. So, the Twist in this Recipe is that the Feta is Pan
Fried really quickly so that there is Crispy Outside & Warm Cheese Flavor

Serves 2
Ingredients:
Lebanese Cucumber- 1 No.
Fresh Greek Tomatoes- 2
Red Onion-1
Dried Oregano- ½ Tsp.
Kalamata Olives- 4, Finely Sliced
Feta Cheese- 3 Tbsp., Crumbled
Dill Leaves- Finely Chopped
Red Wine Vinegar- 1-2 Tbsp.
Salt- A Dash
Pepper- A Dash
Ciabatta Bread- 1 Loaf
Method:
Slice the Edges and Sides of the Ciabatta Bread
Keep it in the Oven to Toast for about 5 Minutes
Peel & Dice the Cucumber into 1 Inch Cubes
Dice Tomatoes into Cubes
Peel & Dice Onion into Fine Slices
In a Salad Mixing Bowl, Add Cucumber, Tomatoes,
Onion, Oregano, Olives, Feta Cheese & Mix Well
Add Olive Oil, Dill Leaves, Vinegar, Salt, Pepper
& Mix Well
Add the Toasted Ciabatta Bread just before Eating
and Serve Fresh!

Organic Grilled Whole Wheat Pizza

Ingredients:
For Toppings:
Onions: 1/2
cup, finely sliced
Green Bell
Pepper: 1/2 cup, finely sliced
Red Bell Pepper: 1/2 cup, finely sliced
Yellow Bell
Pepper: 1/2 cup, finely sliced
Baby Corn: 6
No's., finely sliced
Zucchini: 1 small, finely sliced
Tomatoes (optional): 1 medium, finely sliced
Black Olives: 8 No's., Finely Sliced
Dried Italian Seasoning
Jalapenos (optional): 3 nos
Pizza Topping/Spread- 2 Tbsp.
Red Chilli Flakes
Method:
In this recipe, we have used a Microwave with Grill option to make the Pizza at home
Apply some olive oil on the back
of the Pizza Base, and grill it for 3 to 4 minutes facing this side
In a pan, add
some Olive Oil and roast the Bell Peppers, Onions, Zucchini, and Baby
Corn, saute til you get the desired roasted color and keep aside
(We can directly grill the vegetables in the microwave, but it will take more time)

Meanwhile, on the Pizza
Base add the Pizza Spread and spread it evenly
Then add about 1/4 cup of Mozzarella Cheese on top of the spread
Add the Grilled Vegetables, Olives, Jalapenos, and a small amount of Italian Seasoning to the base
On top of the Pizza Base, add the 1/2-1 cup of Grated Mozzarella Cheese
Then add about 1/4 cup of Mozzarella Cheese on top of the spread
Add the Grilled Vegetables, Olives, Jalapenos, and a small amount of Italian Seasoning to the base
On top of the Pizza Base, add the 1/2-1 cup of Grated Mozzarella Cheese
Bake the Pizza for 7 to minutes
Slice it with a Pizza Cutter and serve hot with Chips/Garlic Bread and a chilled Soda!

Grilled Hearty Thousand Island Salad

Grilled Hearty Thousand Island Salad
Serves 2
Ingredients:
Iceberg Lettuce- 4 to 5 Large Leaves
Tomato- 1 Medium size, Cut into Quarter Inch slices
Zucchini/Cucumber- 5 to 6, Cut into Quarter Inch slices
Green Bell Pepper- 4 to 5, Cut into Quarter Inch slices
Red Bell Pepper- 4 to 5, Cut into Quarter Inch slices
Yellow Bell Pepper- 4 to 5, Cut into Quarter Inch slices
Black Olives- 4 No’s, Finely Sliced
Purple Cabbage- 1 Small Leaf
For Dressing:
Thousand Island Dressing- 2 to 3 Tbsp.
Lemon Juice- 2 Tsp.
Dry Fruits (Walnuts, Pistachio, Raisins)- Finely
Sliced
Red Cherries
Garlic Bread/Toast
Method:
Cut the Tomato into 4 to 8 Pieces
Grill/Roast the Tomato, Zucchini, Bell Peppers for about5
Minutes in a Grill (I use a Grill Microwave with stand)
Check to see till the Veggies are Crisp on the Outside
& still stay soft on the inside
Break the Lettuce Leaves in to small pieces
(preferably by hand), thinly slice the Purple Cabbage Leaves and slice the
Black Olives
Put the grilled Vegetables, Lettuce, Purple Cabbage,
and Black Olives in a bowl
Add 2 to 3 tablespoon of Thousand Island Salad
Dressing, 2 teaspoon of Lemon Juice, a pinch of Salt (if needed) and mix all
these properly
Place the Salad in a bowl, and garnish it with the
finely sliced Dry Fruits and Cherries
Serve the Salad with
hot Garlic Bread or Toast
Tips:
For a Healthier Version, just Few Tsp. of Extra
Virgin Olive Oil can be used as per Personal Preference
