Vegetarian Baked Pasta (Vegetarian Pasta Al Forno)

Vegetarian Baked Pasta (Vegetarian Pasta Al Forno)
Serves 2

Ingredients:
Macaroni Pasta- 250 Grams
Yellow Zucchini- 300 Grams, Cut in Thin Slices
Green & Red Bell Pepper- 100 Grams, Blanched in Hot Oil, De Skinned & Cut in Long Strips

Olive Oil- 50 Ml.

Tomato Concasse- 300 Ml.
Grated Parmesan Cheese- 75 Grams
Grated Mozzarella Cheese- 75 Grams

Chopped Onion- 20 Grams
Chopped Garlic- 15 Grams
Tomato Puree- ¼ Tin
Salt & Pepper- To Taste
White Wine- 90 ml
Dried Oregano- 5 Grams
Green Bell Pepper- 100 Grams, Cut in Julienne

Parmesan Cheese Slices- 20 Grams
Fresh Chive Greens- 10 Grams

Method:    
Boil Water with Salt, Add Pasta, Little Oil & Cook for about 5 Minutes
Drain & Keep Aside

Heat Oil, Shallow Fry Zucchini & Keep Aside
Heat Oil, Add Onion Garlic Bell Pepper Julienne White Wine & Sauté
Check to see till the Wine Reduces
Add Tomato Concasse, Oregano, Cooked Macaroni, little White Sauce & Mix Well
Add Parmesan, Mozzarella & Cook on Low Flame
Let it Cool for some time before filling into Bowl

In a Ceramic Bowl Wrapped with Klin Film (Cling Foil Wrap), layer the Fried Zucchini & Bell Pepper Slices at the Bottom to cover it completely
Fill with the Macaroni & Wrap it back on top
Keep Aside
Bake it in the Oven for Couple of Minutes

Heat Oil, Add Onions, Garlic, Tomato Puree & Cook for about 5 Minutes till Slightly Reduced into a Sauce Consistency

On a Serving Plate, layer the prepared Tomato Sauce
Scoop the Pasta in the Middle, Garnish with Parmesan Cheese Slices

Vegetarian Paneer Fajita

Vegetarian Paneer Fajita
Serves 2

Ingredients:
Cottage Cheese (Paneer)- 200 Grams (Usually 1 Packet), Cut into 1 Inch Cubes
Salt- To Taste
Fresh Coriander Leaves- 1- ½ Tbsp.

 


Method:
Cut all the Vegetables in Thick Slices & Keep Aside

 
 
 
 
 

It took us a little longer than expected to find the Right Ingredients in Chennai for this Recipe & Mexican Cuisine in General
To make sure we got the Accurate & Fresh Stock (most was either Expired or just not available!), we had to frequent many stores across the Town like Brown tree, Nuts & Spices, Nilgiri’s
We tried to make this for the First time & thank God it turned out Yumm!
Guess this Recipe could make someone like my Sister take a look & like as well :)!!

Pappardelle Pasta with Assorted Vegetable Ribbons

Pappardelle Pasta with Assorted Vegetable Ribbons
Serves 2

Ingredients:
Pappardelle Pasta- 1 Pack
Olive Oil- 1 Tbsp.
Garlic Cloves- 4 No's, Finely Sliced
Baby Onions- 6 No’s, Finely Sliced
Spring Onions- 2 No’s.
Red/Orange Carrot- 1 No., Small
Green/Yellow Zucchini- 1 No., Small
Salt- ¼ Tsp.
Salt & Pepper-  To Season
Fresh Ricotta-
Fresh Basil Leaves-
Parmesan Cheese- Freshly Grated

Method:
Wash & Finely Slice the Vegetables (Spring Onions, Carrot, Zucchini) Lengthwise using a Mandoline Slicer/ Peeler into Thin Ribbons
Place All the Vegetable Ribbons in a Bowl
Add Salt, Toss to Mix Well
Put them to Boil in Microwave/Stove till Tender & Set Aside
In a Deep Bottomed Pot, Heat Water till it Boils
Put the Pappardelle Pasta in Boiling Water
Check to see if the Pasta is Cooked
Drain the Pasta & Give Pasta a Proper Shape before it starts sticking together
In the Same Pot, Add Oil, Garlic, Onions & Cook till Golden
Add the Boiled Vegetable Ribbons
Add the Pasta & Toss so all Strands & Vegetables are coated in the Garlic Flavored Oil
Season with Salt & Pepper
Just before Serving, Hold the Pasta with the Tongs & Give the Plate a Spin while Gently Layering the Pasta in it
Add Ricotta & Grated Parmesan Cheese along with the Remaining Spring Onion Ribbons & Fresh Basil Sprig on Top
Serve Hot!

Tip:
The Tip for Non Sticky Pasta is to Rapidly Boil it in 'Hot Bubbling Water' that stops the Pasta from Sticking Together as the Oil won’t Stop it from Sticking
