Assorted Vegetables Simmered in Yoghurt Based Gravy (Vegetable Tawa with Parampara Ready to Cook Spice Mix)

Assorted Vegetables Simmered in Yoghurt Based Gravy (Vegetable Tawa with Parampara Ready to Cook Spice Mix)
Serves 2

Ingredients:
Parampara Spice Mix (Vegetable Tawa)- ½ Packet

Mix of Butter (10 Grams) & Extra Light Olive Oil/Olive Pomace Oil- 1 Tbsp. 
Assorted Vegetables- given below (about 250 Grams)  
Potatoes- 1 Medium, Boiled & Cubed
Red Onion- 1, Finely Chopped
Baby Shallots/Madras Onions- 7 to 8, Peeled
Spring Onions- 3 Stalks with Greens, Finely Chopped
Green Beans- 10 to 12, Finely Chopped, Boiled
Carrot- 1 Medium, Finely Chopped, Boiled
Bottle Gourd (Lauki)- ¼ Cup, Cubed & Boiled
Tomato- 1, Chopped
Frozen Sweet Corn (Makai)- 1 Tbsp., Thawed
Fresh Cottage Cheese (Paneer)- around 100 Grams, Cut in ½ Inch Cubes & Roasted till Golden Brown
Fresh Coriander Leaves- Finely Chopped

Method:
In a Bowl, Add Half Packet of the Spice Mix with about 1 Cup (150 Ml) of water, 50 Grams of Plain Yogurt, Mix Well & Keep Aside
In a Non Stick Skillet (Kadhai), Heat Butter & Oil
Add Onion, Madras Onions & Sauté
Add the Spring Onions & Sauté

Add the Boiled Vegetables & Mix Well
Add Paneer, Mix Gently & Cover to Cook
Add the prepared Spice Mix & Mix Well
Add Tomatoes, Cover & Let the Gravy Simmer

Let the Gravy Simmer for about 7-10 more minutes
Cook till the Gravy becomes thick
Sprinkle Fresh Coriander & Serve Fresh with Phulka, Jeera Rice, Salad, Dal Fry, Curd, Pickle, Papad!

Tips:
Can add Baby Potatoes, Bhindi (yes Okra can also be added!!), Brinjals, Button Mushrooms, Cauliflower, Green Peas, Parwal, Tindli, Green, Red, Yellow Bell Pepper & the list can go on with Seasonal vegetables!
Enhance the Taste of this Dish with Whole, Peeled Baby Potatoes & Onions!

Whole Wheat Wrap with Assorted Vegetables, Bulgur Wheat & Mixed Lentils


International Vegetarian Main Course Special
Whole Wheat Wrap with Assorted Vegetables, Bulgur Wheat & Mixed Lentils
Serves 2

Ingredients:

For the Whole Wheat Wrap:
Whole Wheat Flour- 1 Cup
Water- To Knead the Dough
Salt- To Taste

For Couscous, Lentils & Vegetable Salad:
Bulgur Wheat- ½ Cup
Maggi Vegetable Stock- 1 Tablet
Mixed Lentils (Pancharatna Dal)- 2 Tbsp.
Extra Virgin Olive Oil- 4 Tsp.
Madras Baby Onions- 7-8, Cut in Quarters

Scallions/Spring Onions- 5, Finely Chopped
Carrots- 2 Tbsp., Finely Chopped & Boiled
French Beans- 2 Tbsp., Finely Chopped & Boiled
Green Bell Pepper- ½, Finely Sliced
Black Olives- 4 No’s, Finely Sliced
Jalapenos- 4 No’s
Salt & Black Pepper- To Season
Lemon Juice- 2 Tsp.

Lettuce- 1 Cup, Finely Shredded
Mozzarella Cheese- 1 Cup, Freshly Grated
Wrap Salsa- For Garnish

Method:

For the Whole Wheat Wrap:
Combine all the ingredients for the Wrap & Keep Aside
Make 4 Large sized Tortilla Wraps & Keep Aside

For Couscous, Lentils & Vegetable Salad:
In a Deep Bottomed Pot, Boil Water
Add the Vegetable Stock Tablet & Couscous
 
Check to see if it cooked with a Fork

In a Wide Skillet, Heat Oil
Add Baby Onions, Scallions, Green & Red Bell Pepper & Sauté
Add the Boiled Carrots & French Beans, Black Olives, Jalapenos & Sauté


Add Couscous, Season with Salt, Black Pepper, Chilli Flakes, Cover & Cook Well
 

Add a Dollop of Butter when done

Set Aside to Cool





Tips:
Can use Finely Shredded Carrots, ½ Finely Sliced Red & Yellow Bell Pepper as well

Can use boiled Fresh/ Frozen Thawed Soy Edamame Beans instead of the Mixed Lentils used in this Recipe

Can use ready made Whole Wheat Wrap instead of freshly made Wraps

Can use Packaged Mixed Salad Greens instead of just Lettuce

Quick & Healthy Vegetarian Quesadillas

Mexican Cuisine
Quick & Healthy Vegetarian Quesadillas
(with Assorted Vegetables like Fresh Green, Red & Yellow Bell Peppers, Onions, Tomatoes, Cheddar Cheese)
Serves 3-4

Ingredients:
Plain/Multigrain Tortillas- 8 No’s
Extra Light Olive Oil/Olive Oil- 1 Tbsp.
Onion- 1, Finely Chopped
Spring Onion- 1, Finely Chopped
Green Chilli- 1, Finely Chopped
Green Bell Pepper- 1, Finely Chopped
Red Bell Pepper- 1, Finely Chopped
Yellow Bell Pepper- 1, Finely Chopped
Tomatoes- 1, Finely Chopped


Cumin Powder- ½ Tsp.
Salt & Pepper- For Seasoning
Lemon/Lime Juice- ½ Tsp.
Cheddar Cheese-2 ½ Cups, Finely Sliced
Fresh Coriander Leaves- 1 Tbsp.

Method:
Heat Extra Light Olive Oil in a Non Stick Wide Pan
Add Onion, Spring Onion and Sauté
Add Green, Red, Yellow Bell Peppers & Sauté


Add Tomatoes, Salt & Pepper, Lemon Juice, Cumin Powder & Mix


Cook for about 3-4 Minutes

Add a Dash of Lemon Juice & Mix Well
On a Flat Non Stick Skillet (Tawa), Warm 2 Tortillas and Keep Aside
On one side of the first Warm Tortilla, Layer about ¼ Cup of the Cheese, then Layer it with the Roasted Veggies & Add about ¼ Cup of the Cheese on top of the Tortilla





Seal the Base Tortilla with the Second Warm Tortilla

Toast this on the Skillet till Cheese starts to Melt

Cut into 4 with a Pizza Slicer
Serve Fresh with Salsa/Any Choice of Dip!

Tips:
Can make a Vegan Quesadilla by using Soy Cheese
