Assorted Vegetables Simmered in Yoghurt Based Gravy (Vegetable Tawa with Parampara Ready to Cook Spice Mix)
Serves 2
Ingredients:
Parampara Spice Mix (Vegetable Tawa)- ½ Packet
Mix of Butter (10 Grams) & Extra Light Olive Oil/Olive Pomace Oil- 1 Tbsp.
Assorted Vegetables- given below (about 250 Grams)
Potatoes- 1 Medium, Boiled & Cubed
Red Onion- 1, Finely Chopped
Baby Shallots/Madras Onions- 7 to 8, Peeled
Spring Onions- 3 Stalks with Greens, Finely Chopped
Green Beans- 10 to 12, Finely Chopped, Boiled
Carrot- 1 Medium, Finely Chopped, Boiled
Bottle Gourd (Lauki)- ¼ Cup, Cubed & Boiled
Tomato- 1, Chopped
Frozen Sweet Corn (Makai)- 1 Tbsp., Thawed
Fresh Cottage Cheese (Paneer)- around 100 Grams, Cut
in ½ Inch Cubes & Roasted till Golden Brown
Fresh Coriander Leaves- Finely Chopped
Method:
In a Bowl, Add Half Packet of the Spice Mix with about
1 Cup (150 Ml) of water, 50 Grams of Plain Yogurt, Mix Well & Keep Aside
In a Non Stick Skillet (Kadhai), Heat Butter & Oil
Add Onion, Madras Onions & Sauté
Add the Boiled Vegetables & Mix Well
Add Paneer, Mix Gently & Cover to Cook
Add the prepared Spice Mix & Mix Well
Add Tomatoes, Cover & Let the Gravy Simmer

Let the Gravy Simmer for about 7-10 more minutes
Cook till the Gravy becomes thick Sprinkle Fresh Coriander & Serve Fresh with Phulka, Jeera Rice, Salad, Dal Fry, Curd, Pickle, Papad!
Tips:
Can add Baby Potatoes, Bhindi (yes Okra can also be added!!), Brinjals, Button Mushrooms, Cauliflower,
Green Peas, Parwal, Tindli, Green, Red, Yellow Bell Pepper
& the list can go on with Seasonal vegetables!
Enhance the Taste of this Dish with Whole, Peeled Baby
Potatoes & Onions!
