The World of Yummy Lassi's!

Indian Non Alcoholic Beverage Special
The World of Lassi!

Sweet Mango Fruit Lassi
Blend Plain Yoghurt 750 Ml., Mango Syrup 250 Ml., Sugar Syrup 100 Ml. (made preferably from Cane Sugar 50 Grams Boiled with 300 Ml. of Water Simmered in Saucepan for about 4-5 Minutes & Cooled, also this Syrup can be Refrigerated for Weeks)   
Pour into Tall Serving Glasses & Garnish with Fresh Pomegranate Seeds

Salty & Spicy Lassi
In a Mortar & Pestle, Ground Cardamom Seeds, Coriander Seeds & Black Peppercorn Roughly & Keep Aside
Blend Ice Cubes & Plain Yoghurt
Add the Crushed Spice Mixture & Blend Again
Pour into Tall Serving Glass & Garnish with Freshly Chopped Coriander Leaves

Classic Raspberry Jam Tart


Classic Raspberry Jam Tart
Serves 2

Ingredients
For the Basil Syrup:
Water- 250 Ml.
Castor Sugar- 250 Grams
Fresh Basil Leaves- 6 No’s
For the Tart:
Plain Sponge Cake- 20 Cms.
Short Crust Pastry Flan Case- 20 Cms.
Raspberry Jam- 5 Tbsp.
Fresh Raspberries- 1 Kg

Method:
For Tarte Con Lamponi e Basilico (the Basil Syrup):
In a Sauce Pan, heat Water & Sugar together until Boiling Point
Add the Basil for as long as possible so it is Infused (this can be done over night)
Pre Heat the Oven to 200°C
Cut the Sponge Cake in half, horizontally across the centre
Spread one half with raspberry preserve and place it upside down into the pastry shell
Remove the basil leaves from the syrup and spoon the syrup over the sponge until it is evenly soaked
Cover the tart with the raspberries and bake for 15 minutes until the raspberries are hot and oozing juice
Serve immediately

Tips:
A fine short crust pastry lined with a basil soaked syrup sponge topped with fresh raspberries and decorated with a little drop of sugar honeydew

Cottage Cheese (Paneer) Simmered in Tomato Gravy (No Onion- Garlic/Saatvik)

North Indian Vegetarian Main Course Special
Cottage Cheese (Paneer) Simmered in Tomato Based Gravy (No Onion- Garlic/Saatvik)
Serves 2

Ingredients:
Coriander Seeds (Sabut Dhaniya)- 1 Tsp.
Extra Light Olive Oil/Olive Pomace Oil- 1 Tbsp.
Fennel Seeds (Saunf)- ½ Tsp.
Tomatoes- 2 No’s,
Ripe Pureed
Turmeric Powder (Haldi)- ¼  Tsp.
Red Chilli Powder- ½ Tsp.
Cottage Cheese (Paneer)- 200 Grams (Usually 1 Packet), Cut into 1 Inch Cubes
Salt- To Taste
Fresh Coriander Leaves- 1- ½ Tbsp.

Method:
Roughly crush Coriander Seeds in a Mortar Pestle/Grinder

Heat Oil & Add Coriander-Fennel Seeds & Saute
Add the Fresh Tomato Puree, Haldi, Red Chilli Powder, Mix Well
Stir till Oil Surfaces out of the Gravy
Add ½ Cup of Hot Water, Salt & Let the Gravy Simmer
Add the Paneer Gradually in the Gravy
Cover & Cook on Low Flame for about 8-10 Minutes
Serve Hot with Phulka, Fresh Green Chillies & Set Curd for a Dhaba Experience! 

Tips:
Can Add 1-½ Tsp. of Chopped Spring/Green Onions for Garnishing 
For all the Health Conscious People, in case the Paneer is used fresh without slightly frying, make sure to keep a check on it so that it Stays Firm & doesn’t crumble

Instant Microwave Egg less Chocolate Cake

International Egg less Dessert Special
Instant Microwave Egg less Chocolate Cake
Serves 2
Preparation Time- 15 Minutes

Ingredients:
Bleached/ Refined Flour (Maida)- ¼ Cup
Baking Powder- ½ Tsp.
Cocoa Powder- 1 Tbsp.
Sour Curd- 1 Tbsp.
Soda Bicarb- a Pinch (about 1/8 Tsp.)
Butter- 2 Tbsp.
Castor/Powdered Sugar- 2 ½ Tbsp.
Pure Vanilla Essence- ½ Tsp.
Water- 2 Tbsp.

Method:
Sieve Flour, Baking Powder, Cocoa powder together & Keep Aside
In a Separate Bowl, Whisk Curd and Soda Bi-Carb
In a Microwave Safe Bowl, Heat Water for about a Minute
Add Butter, Castor Sugar & Vanilla Essence in the Hot Water Gradually & Whisk all Together properly
(If the Butter doesn’t melt the Way it should, can also Microwave the Whisked Batter for about 30 Seconds or till the Butter Melts)
Mix all the Dry Ingredients (Flour Mixture) & Wet Ingredients (Curd, Bi-Carb & Butter Mixture) into a Large Mixing Bowl & Whisk Together
Grease a Microwave Safe Baking Dish with Butter
Transfer the Cake Batter into the Dish & Microwave on High for about 4-5 Minutes or Check to see if a Toothpick comes out Clean
 
Remove & Let it Cool for 5-7 Minutes
Cut in Desired Pieces & Serve Warm Topped with Chocolate Syrup!


Tips:
Microwave the Cake just for 20 Seconds before Serving
Add Few Finely Sliced Nuts in the Cake Batter for a Nutty Cake Chocolate Cake
