Chocolate & Prune Brownie

International Desserts Special
Chocolate & Prune Brownie


Ingredients:
Eggs- 3
Sugar 150-160 Grams
Fresh Vanilla Pods- Scraped
Flour-
Cocoa Powder-
Dates- 75 to 80 Grams, Finely Chopped
Prunes- 75 to 80 Grams, Pitted, Finely Chopped


Method:
On a Double Boiler, add the Chocolate & Melt it till Creamy
Add the Butter & Mix Well
Keep aside


For Batter:
Whisk Eggs & Sugar together till Creamy
Add the Chocolate Mix
Add the Flour & Cocoa Powder, Gently Fold both in the Batter

In a Greased Tray lined with Butter Paper, Pour the Batter
Bake at 170 Degrees C for about 35 Minutes
Check if Done
Scrape the side, make sure it can be removed easily
Hold the Brownie Tin with the Plate & turn it upside down on a Serving Plate
Sprinkle Powdered Sugar & Cut in Big Squares like Brownie

Tips:
While Melting Chocolate on a Double Boiler, the added Butter provides an great Sheen & Gloss for any Brownie Recipe

Potato Stuffed Tangy Bun Sandwich (Dabeli)

Indian Vegetarian Snacks Special
Gujarati Cuisine
Potato Stuffed Tangy Bun Sandwich (Dabeli)
Serves 4

Ingredients:
Potatoes- 4, Boiled
Onion- 1, Finely Chopped
Garam Masala- 1-1/2 Tsp.
Degi Mirch- 1 Tbsp.
Chaat Masala-1 Tsp.
Salt-To Taste
Sugar- 1 Tsp.
Water- For the Spice Mix
Olive Pomace Oil-1 Tbsp.

For Lehsun Chutney:
Garlic Cloves- 1 Cup
Degi Mirch- 1 Tbsp.
Lemon Juice- 1/2 No. 
Salt- To Taste
Water-

For Date Tamarind Chutney:
Dry Dates-  Cup
Tamarind (Imli)-
Jaggery-
Red Chilli Powder-
Salt-
Water-

Dabeli Buns-
Nylon Sev-
Pomegranate Seeds-

Method:
Mix the Dry Masalas (Garam Masala, Degi Mirch, Chaat Masala, Salt & Sugar) in Little Water & Keep Aside
Mash the Potatoes with Hands/Potato Masher to a Smooth Mix
Collect the Mixture in the Bowl & Keep Aside
Heat Oil in a Pan
Add the Masalas & Saute till a Boil Comes
Cook the Potatoes in the Masala Mixture & Saute
Remove from Heat & Keep Aside

For Garlic Chutney:
Blend Garlic Cloves, Degi Mirch, Lemon Juice  into a Fine Paste by sprinkling Water if needed



For Date Tamarind Chutney:
Blend Tamarind Puree & Soaked Dates into a Fine Paste
Heat a Non Stick Pan
Add the Date-Tamarind Paste & Stir
Add Jaggery, Red Chilli Powder, Salt & Water
Stir Continuously till the Paste thickens with a Chutney Consistency


Cut the Buns in Half but Leave the Backside Sealed
Spread the Garlic Chutney on one side of the Bun, then Add a layer of Potato Filling the Centre, next Spread a Layer of the Date-Tamarind Chutney on the other side of the Bun 


Add a Dash of Onions, Ribbon Sev, Anar Dana inside the Dabeli Bun  & Serve with Mint Chutney!



Tip:
Mixing Masala in Water helps avoid the Burnt Masalas which may impart Little/No Aroma/Flavours

Variations:
Heat Ghee/Oil, Add all the Dry Masalas to Roast till the Flavours are Released
Keep the Mixture Dry & Use with Potatoes as Needed

Non Alcoholic Instant Plum Cake

Winter Festive Season Baking Special
Non Alcoholic Instant Plum Cake
Serves 3-4

Ingredients:
Eggs- 4 No's
Unsalted Butter/White Butter- 200 grams
Refined Flour (Maida)- 200 grams
Brown Sugar- 200 grams, finely ground for Castor Sugar
Spice Mixture- 1 Tbsp (1/4th Tsp. each of Cinnamon Powder, Nutmeg Powder, Dry Ginger Powder and Clove Powder)
Assorted Mixture of Dry Fruits (Chopped Walnuts, Almonds, Cashew, Raisins, Dates, Cherries) & Tutti Frutti- 100 Grams 

Baking Powder- 1/2 Tsp.
Pure Vanilla Essence/Extract- 1 Tsp.

Process:

- Preheat the Electric Oven (the old style Aluminium ones we prefer for our Soft Cakes!) at 360 degrees Celsius/set the Microwave (Convection) at 180 degrees Celsius for 10-15 minutes
- Gently coat the Dry Fruits (Cashew, Cherries, Tutti Frutti) with Refined Flour and keep aside
- Finely grind the Spice Mixture and keep aside
- Sieve the Flour and Baking powder together in a bowl and keep aside
- Separate the Egg whites from the Egg yolks and keep the yolks aside
- In a bowl, beat the Egg whites till a foamy texture appears
- Add the Egg yolks gradually one after the other to the Egg white mixture and beat the mixture
- Add the Castor sugar to the Egg mixture and beat it till the Sugar blends well with the Eggs
- Add Butter to the mixture and beat the whole mixture well
- Slowly add the Flour mixture to the Eggs and mix well with a spatula
- Slowly add the Dry Fruits mixture in the batter and mix well
- Add the Vanilla Essence to the prepared Batter
- Pour the batter in a greased Cake Container (Aluminum/Silicon Mould) and set to bake in the preheated oven
- After the Cake color turns Golden brown, check to see if an inserted toothpick comes out clean.
- Our Baked Delight is ready to be taken out to cool and then cut in desired shapes :)!! 




Tips:
-          Use this Instant Non Alcoholic version for your pregnant friends (their sudden cravings) and the Teetotaler!
-          Traditional recipes mostly use Caramelized Sugar to get the desired color
-          Few secret recipes also use Orange Juice towards the end
