Feta Cheese & Rocket Leaves (Arugula) Salad

Indian Vegetarian Salads Special
Feta Cheese & Rocket Leaves (Arugula) Salad
Desi Salad
Serves 2

Ingredients:
Feta Cheese- 2 Tbsp., Roughly Crumbled
White Sesame Seeds- a Few, Toasted
Pomegranates Seeds- a Few
Red Radish- Finely Sliced
Red Pepper- 1 Tbsp., 2 Inch Juliennes Finely Sliced
Rocket Leaves (Arugula)- 12 No’s
Sun Dried Tomatoes- Few Pieces 
Yellow Pepper- 1 Tbsp., Juliennes Finely Sliced

For Dressing:
Extra Virgin Olive Oil- 2 Tbsp.
Lemon Juice- 1 Tbsp.
Honey- 1 Tbsp.
Freshly Ground Black Pepper-a Pinch
Rock Salt- a Pinch

Method:
In a Salad Bowl, Mix Rocket Leaves, Bell Peppers, Sun Dried Tomatoes
Sprinkle Feta Cheese on Top
Garnish with Sesame Seeds
Just before consumption, drizzle the Dressing & Serve Fresh!

Tips:
The long peppery leaf called Arugula but there is no other Indian/Hindi name that I know of!

Fresh Fruit Custard


Fresh Fruit Custard
Classic Soul Food & Old Favorites!
Serves 3-4

Ingredients:
Eggs- 4 No’s
Sugar-
Milk- 300 Ml
Single Cream- 100 Ml

For the Fruit Bowl:
Bananas- Sliced
Oranges- Segmented
Pomegranate (Anar)-
Pears- Chopped
Apples- Chopped
Vanilla Essence-

Method:
Separate the Eggs Yolks from the Whites
Add the Eggs in the Double Boiler
Add Sugar in the Eggs & now start to Whisk as they heat in the boiler till it becomes Pale & Frothy

In a Sauce pan, add Milk Add Single Cream
Infuse it with Few Drops of Vanilla Essence, Crushed Cardamom Pods & Whisk
Pour the Egg Yolk Mixture into the Milk
Heat this Mixture on very Low Flame so it simmers gently
Gently stir the Custard till the Egg Yolks are cooked & the Custard thickens
If Needed let the Flame be little higher & also keep a watch on it
Take the Custard off the flame
Strain the Custard in case lumps are formed
Keep aside & let it cool
Add a touch of Vanilla Essence again

In a Bowl, Mix Bananas, Oranges, Pomegranate, Pears Chopped, Apples Chopped & keep it refrigerated till just before Serving
In the Fruits Bowl, Add the Custard through a Strainer & Combine Well
Serve in Individual Glasses like a Martini Glass etc.
Decorate it with Anar & Serve Fresh!

Tips:
Interestingly, ‘Stressed’ spelled backwards is Desserts!!

Few Techniques to keep in mind while making Fresh Custard are:
Preventing Oxidation
Using a Double Boiler
Cooking the Delicate Eggs

So the Double Boilers are good to have gentle heat & to have control over the heat
One of the Great Custard always has Fresh Scooped Vanilla Pods
Put a heat Diffuser Mat (Metal) under the Pan to avoid Overcooking/Burnt Custard
If the Custard is a bit Thinner in its consistency, just make some Flour-Custard Semi Liquid Mix & add it in the Custard so that it starts to Thicken

Organic Beaten Red Rice Flakes (Poha) Breakfast/Snack

Indian Vegetarian Breakfast Special
Organic Beaten Red Rice Flakes (Poha)
A healthy alternative to the classic White Poha Breakfast/Snack
Serves 2

Ingredients:
Organic Beaten Red Rice Flakes (Thick Poha)- 3 Cups
Green Chillies (Hari Mirch)- 3-4, Finely Chopped
Potatoes (Aloo)- 2 Medium, Finely Chopped
Olive Pomace Oil- 1 Tbsp.
Organic Mustard Seeds (Rai)- 1 Tsp.
Organic Fennel Seeds (Saunf)- 1Tsp. 
Onion- 1, Finely Sliced

Salt (Namak)- To Taste
Organic Turmeric Powder (Haldi)- 1/4 Tsp.
Sugar (Cheeni)- 1/2 Tsp.
Ratlami Sev- To Garnish
Chopped Coriander (Dhaniya)- To Garnish
Pomegranate Seeds (Anar Dana)- To Garnish
Lemon Juice (Nimbu ka Ras)- To taste
Jeeravan Powder

For Kadak Chai:
Wagh Bakri Tea- 
Water-
Milk-
Sugar-

METHOD:
Wash the Poha in a strainer 2 times till the Water comes out clean

Sprinkle some Salt, Turmeric & Few Drops of Oil while mixing the Poha

Keep it aside for about 8-10 Minutes

Heat Oil in a Wide Non Stick Pan
Add Mustard and as they start to splutter add Fennel Seeds
Add the Green Chilies, Onions and Sauté till the Onions turn Translucent


Add Potatoes, Sprinkle some Water & Cover to Cook till Potatoes are Soft

Add the Strained Poha, sprinkle Salt, Sugar and Mix thoroughly

Sprinkle some more Water, Cover & Cook it for 5-10 more Minutes to let it cook in its own Steam
Serve Hot Garnished with Coriander, Sev & Pomegranate Sprinkled with Jeeravan Powder with Kadak Chai (Strong Masala Tea)!

Tips:
If needed, feel free to decrease/increase the Poha quantity (according to personal preference) 
Be very careful while washing the Thin Poha as it becomes mushy easily. Try to change the water and wash Poha till water comes out clean and keep the Poha dry

The majority of recipes in Andhra, Tamilnadu and North India are prepared from 2 types of Poha:
Thick Poha- Used for Chivda and they puff when deep fried
Semi Thick Poha- Used for Kanda/Batata/Indori Poha
The other 2 varieties like Medium Poha and Paper Poha are easily available & more often used in Western Indian cuisine.
Poha is a simple to prepare, high calorie yet nutritious, low fat and low calorie breakfast, snack or brunch enjoyed by people of all age groups!
During our stay in Vadodara, some of the best Poha (with Chai) was always from the Tea Shops (Chai-Poha Stall)
As we all want to Turn our Traditional Dishes into a Nutritious Meal, can Add 3 Tbsp of Finely Chopped Carrot, 2 Tbsp. of Green Peas & 2 Tbsp. Of Finely Chopped French Beans

Variations: 
For a fasting/festival day meal, Grandmothers (both my Paternal & Maternal) & Mom prefers to have a light meal like Upma, Poha, Dosa, ideally without Onion Garlic

Bostan Salatasi (Fresh Green Salad)

International Vegetarian Salad Special
Turkish Cuisine
Bostan Salatasi (Fresh Green Salad)
Serves 2

Ingredients:
Lettuce (Iceberg, Romaine, Lollo Rosso or any Variety of Choice)-
Onion- 1 Large, Outer Part Rings

Vinaigrette Dressing (made with Lemon Sauce, Parsley, Olive Oil)-

Turkish White Cheese-
Artichokes-
Boiled Sweet Corn-
Walnuts-
Fresh Pomegranate Seeds-
Powdered Sumac-

Method:
In a Large Salad Mixing Bowl, mix the Lettuce & Onion

Transfer the Contents (without dressing) into a Serving Plate
Add Turkish White Cheese, Artichokes, Boiled Sweet Corn, Walnuts, Fresh Pomegranate Seeds & the most Important ingredient is the Powdered Sumac Spice mix

Serve Freshly Tossed with the Dressing!

Tips:

Three different types of Lettuces (Iceberg, Romaine, Lollo Rosso or any Variety of Choice) are used in this Recipe

Potato Stuffed Tangy Bun Sandwich (Dabeli)

Indian Vegetarian Snacks Special
Gujarati Cuisine
Potato Stuffed Tangy Bun Sandwich (Dabeli)
Serves 4

Ingredients:
Potatoes- 4, Boiled
Onion- 1, Finely Chopped
Garam Masala- 1-1/2 Tsp.
Degi Mirch- 1 Tbsp.
Chaat Masala-1 Tsp.
Salt-To Taste
Sugar- 1 Tsp.
Water- For the Spice Mix
Olive Pomace Oil-1 Tbsp.

For Lehsun Chutney:
Garlic Cloves- 1 Cup
Degi Mirch- 1 Tbsp.
Lemon Juice- 1/2 No. 
Salt- To Taste
Water-

For Date Tamarind Chutney:
Dry Dates-  Cup
Tamarind (Imli)-
Jaggery-
Red Chilli Powder-
Salt-
Water-

Dabeli Buns-
Nylon Sev-
Pomegranate Seeds-

Method:
Mix the Dry Masalas (Garam Masala, Degi Mirch, Chaat Masala, Salt & Sugar) in Little Water & Keep Aside
Mash the Potatoes with Hands/Potato Masher to a Smooth Mix
Collect the Mixture in the Bowl & Keep Aside
Heat Oil in a Pan
Add the Masalas & Saute till a Boil Comes
Cook the Potatoes in the Masala Mixture & Saute
Remove from Heat & Keep Aside

For Garlic Chutney:
Blend Garlic Cloves, Degi Mirch, Lemon Juice  into a Fine Paste by sprinkling Water if needed



For Date Tamarind Chutney:
Blend Tamarind Puree & Soaked Dates into a Fine Paste
Heat a Non Stick Pan
Add the Date-Tamarind Paste & Stir
Add Jaggery, Red Chilli Powder, Salt & Water
Stir Continuously till the Paste thickens with a Chutney Consistency


Cut the Buns in Half but Leave the Backside Sealed
Spread the Garlic Chutney on one side of the Bun, then Add a layer of Potato Filling the Centre, next Spread a Layer of the Date-Tamarind Chutney on the other side of the Bun 


Add a Dash of Onions, Ribbon Sev, Anar Dana inside the Dabeli Bun  & Serve with Mint Chutney!



Tip:
Mixing Masala in Water helps avoid the Burnt Masalas which may impart Little/No Aroma/Flavours

Variations:
Heat Ghee/Oil, Add all the Dry Masalas to Roast till the Flavours are Released
Keep the Mixture Dry & Use with Potatoes as Needed

Syria is definitely for the People who have a 'World Tour' of Ancient Historical Places in their Itineraries & the Ancient City of Aleppo should be a Must Visit on that list!
Located in the Northern Part of Syria, a City like Aleppo is Fascinating not just because it is one of Oldest Cities in the World, but also because of its Varied History. The City’s Location was a Significant Destination for Traders on the Silk Road so as a Result Aleppo became one of the First Cosmopolitan Cities in the World Map

In the Present Day, as we enter into one of the Old Street markets of Aleppo, there is still the Old World Charm especially the Spice Market!
Aleppo is considered as ‘The Pearl of the Arab Kitchen’
Damascus is 300 Kilometres South of Aleppo, Modern Cosmopolitan, Fast Food Pattaya Mini Pizza which is a Tomato Sauce Red Pepper Base Pizza with No Cheese

Aleppo Region's 7 Spice Mixture called Baharat has equal quantities of Finely Powdered Black Peppercorns, Cinnamon, Cloves, Dry Ginger, Green Cardamon, Green Peppercorns & Nutmeg

Many new to the concept of Mezza mistake the generous amounts and endless array of dishes as the meal itself rather than a prelude to even more food!

Hot Pepper Dip (Muhammara) & Baba Ghanoush Aleppan Style:
Serves 2
Ingredients:
Big Purple Striped Aubegine/Brinjal - 2
Red Pepper Paste
Pomegranate Molasses
Paprika- 1 Tsp.
Cumin Powder- 1 Tsp.
Olive Oil- 
Garlic Olive Oil-
Puree-

Lemon Juice-
Tahina-
Sesame Paste-
Parsley-
Red Pepper-
Green Pepper-
Walnuts- a Handful, Roughly Chopped

Method:
Make Piercing in the Brinjal throughout to Assist in Steaming
Keep them to Grilll on Coals so that the Brinjal is Tender along with the Charred, Smokey Flavor
When Done, Keep Aside to Cool
Remove the Charred Skin & Chop into Bite Size Pieces
Put in a Large Mixing Bowl
Add Parsley, Red Pepper, Green Pepper,
Top it with Walnuts & Molasses
Meanwhile, the Red Pepper Paste is used as a Base with Pomegranate Molasses
Add Paprika, Cumin Powder, Olive Oil, Bread Crumbs
Add Garlic Olive Oil, Puree, Lemon Juice, Tahina Sesame Paste

Tips:
Use a Non Sugary Bitter Bread Stick & Freshly Crumble the Bread into a Fine Powder

One of the Famous Breakfast Dishes of Syria
Broad Beans Stew (Ful bi Laban) ‘Ful’ is Arabic for Fava/ Broad Beans

Ful Mudamas:
a Vegetarian Warm Broad Bean Salad Dish Served as a Breakfast or a Nice Supper
with Pulses being a Cheap Alternative to Meat
Traditionally Prepared with Tahina, Cumin, Garlic, Chilli, Olive Oil, Lemon Juice &
Served with a Variety of Warm FlatBread, Carrot & Slices & Some Pickles  
Fresh Pomegranate Juice is Less Acidic so can be used instead of Lemon Juice to top the Dish

French Desserts like Bava Aron Eclair Shokola Opera Ganace, Bechamel, Sauce Blanche, Souffle, Quiche & a fusion of Croissant with Cheese are popular as well

Fill the Courgettes with stuffing
Put the Courgettes open mouth up in the Tomato Gravy, Cover & Cook till the Knife comes out clean

Burghul (a type of cracked wheat)
Other popular dishes are based on Mediterranean vegetables such as zucchini and eggplant hollowed out and stuffed with meat and rice

The Syrian palate prizes the salty, tangy and sour flavours. Apart from the generous use of salt in cooking, cheeses like labneh, shankleesh and jibne baida satisfy some of the salty cravings. Lemon juice is common in all Mediterranean cooking but other key ingredients include Sumac (a deep red spice that adds a lemony taste to salads) & the slightly tangy fresh herb Baqli/Purslane (in English)

One of the distinctive ingredients found in Syria is Freekeh (young wheat that has been harvested and roasted to add a smoky flavour) It has a chewy texture like brown rice and is delicious served with meat or poultry
Syria also boasts truffles which are found in the desert and have a wonderful earthy flavour and aroma, though nowhere near as strong as those found in France.

Many Syrian expatriates miss the variety of food available on the streets of Damascus especially the sweets, filled with nuts, clotted cream called Ashta, sugar syrup and hints of rosewater and orange blossom water

Classic Middle Eastern Dessert Harissa:
Dry Roast Semolina till golden add baking powder & toss to keep it from burning

Mix the Semolina with Syrup & Mix Well
Add Ghee now
Layer the Mixture in a Tray with butter paper
Let it chill in Fridge for 30 Minutes
Invert it cut in pieces & Garnish with Pistachios

Kibbeh bil Sanieh:
For Filling:
Onions Mince Meat
Heat Butter 1 Tbsp. Pine Nuts mixture added to the Filling & it is set aside to cool

For Kibbeh Mix:
Fine Bulgur Wheat soaked overnight & Drained
Add Salt, Baharat Spice Mix Onion Grated

Lean Minced Meat Lamb/Beef Cracked Black Pepper
Mash with hands into a smooth dough
layer of bulgur dough on a wide Baking Pan
add the Filling & Cover with Bulgur Dough smoothed as Top Cover
Drizzle Olive Oil cooks in Moderate oven for 25 Minutes
Serve with Yoghurt!


Sweets especially from Damasucs are made in huge batches & skills passed down through Generations like Ashta (Clotted Cream), Lady's Arms (Znoud al Slit made with Fried Filo with Ashta Filling), famous Damascus Rose (layer of Filo Pastry sandwich with Ashta Filling), Karabij Halab (Biscuit layer at bottom with layer of thick Marsh mellow Cream Topping Pistachio topping), World Famous Baklava!!


Baklava:
Layer Filo Pastry in a Baking Tin
Fill with the stuffing of Mixed Nuts ()
cut into Diamond shaped pieces carefully so that the top layer doesn't come off
Bake at 175-180 Degrees C for about 55 Minutes

Boil Sugar, Water, Lemon Juice, Orange Blossom & Rose Water
Pour the Hot Syrup over the Warm Baklava
Let it cool & then cut into Diamond shaped pieces

Garbanzo Beans Simmered in Tomato Based Gravy (Chole)

Indian Vegetarian Main Course Special 
Punjabi Cuisine
Garbanzo Beans Simmered in Tomato Based Gravy (Chole)
Serves 4

Ingredients:
White Garbanzo Beans/Chick Peas (Kabuli Chana)- 2 Cups
Black Tea Bags- 2
Extra Light Olive Oil/Olive Pomace Oil- 1 Tsp.
Onions- 2 Medium
Green Chillies- 2
Ginger- 1 Inch Piece
Garlic- 3 Cloves
Fresh Roma Tomatoes- 3 Medium
Turmeric Powder (Haldi)- ½ Tsp.
Chole Masala- 1 Tbsp.
 
Fresh Coriander Leaves- 2 Tbsp.

Method:
Clean, Wash & Soak Garbanzo Beans in Enough Water to Cover about 3 Cups Water Overnight
Drain & Pressure Cook Garbanzo Beans with Tea Bags & 4 Cups Water till Tender
Wash, Peel, Dice & Blend Onions, Green Chillies, Ginger & Garlic into a Fine Paste
Wash, Dice & Blend Tomatoes into a Fine Paste
Heat Olive Pomace Oil in a Non Stick Deep Bottomed Pot
Add Onions-Green Chillies- Ginger- Garlic Paste & Stir Fry till the Colour Changes
Add Tomato Paste & Stir till Cooked
Add Turmeric Powder, Chole Masala & Mix Well till Oil Surfaces out of the Tomato Gravy
Add Boiled Garbanzo Beans, Water & Let the Gravy Simmer on Low Flame

 Garnish with Fresh Coriander Leaves & Serve Hot with Puri/Phulka/Plain Parantha & Set Curd!
Tips:
Chole should always be Pre Soaked & Pre Boiled along with Tea Bags for a Authentic Pindi Flavor

The Fertile Valleys & the Sea of Sind province; to Pastoral Baluchistan, from neighboring Iran; to the Punjab with its Five Rivers and the Rugged North West Frontier, home of the Chappli Kebabs
Indian Cooking Style along with Middle Eastern Techniques, Pakistani Cuisine is more of Meat Based compared to Indian Cuisine which is Vegetable Based

Ghee has a Higher Burning Point which leads to more flavours being released from the Spices & is essential along with Mustard Oil 

Buy Small quantities of the Spices to retain the flavours like Coriander Seeds & Powder, Cumin Seeds & Powder, Red Chillies like Kashmiri give subtle flavour, Crushed Chilli Seeds, Cloves, Green & Black Cardamom, Garam Masala, Dried Plums, Saffron, Dried & Whole Pomegranate Seeds
 

A Deep Clay Oven Tandoor is an essential part of the Pakistani Cuisine even now as it had originated here
The Intense Heat in the Middle is best to Cook any Meat, Seafood, Vegetables etc while the Sides of the Oven are utilized to Cook the Breads
The Bread that comes out of the Tandoor is Crispy on Bottom & Soft on the Top
The Unleavened Water Based Bread is called Roti & the Leavened Yeast Based Bread is called Naan which has Milk/Yoghurt added to give a Richer Consistency

Method:

Method:
In Vegetable Oil/Ghee, Add the Minced Paneer/Vegetables & Saute
After the Water is reduced, Add Chopped Onions, Garlic, Coriander Powder, Cumin Powder, Chilli Powder & Saute
The Spices need to Cook to avoid the Raw Taste, Set Aside to Cool when done
On a Single Wonton Wrapper, Put a Spoonful of Filling in the Middle, Moisten the ends with Water changes Color, Fold the Opposite sides Press Gently to Seal, the Top needs to be as thin as possible
Steam for about 15 Minutes till the Pastry becomes Translucent
Garnish with Plain Yoghurt & Sprinkle with Fresh Chopped Coriander


Clarified Butter (Ghee):
To make Ghee, gently melt Unsalted Butter on Low Heat
After time the Butter will form Three different Layers- the Foam on Top (which is skimmed off and discarded), the Milk Solids (which will Sink to the bottom) & the Ghee will be left in the Middle

Okra Cooked with Onions & Tomatoes (Bhindi Pyaz Tamatar Wali)

Okra Cooked with Onions & Tomatoes (Bhindi Pyaz Tamatar Wali)
Serves 2-3

English- LadyFinger/Okra 
Hindi- Bhindi
Kannada- Bhendekayi
Malayalam- Vendakka
Tamil- Vendaikai
Telugu- Bendakaya


Ingredients:
Extra Light Olive Oil/Olive Pomace Oil- 2 Tbsp.
Fresh LadyFinger/Okra (Bhindi/Bendakaya)- ½ Kg.
Onions- 1 Medium, Finely Sliced
Cumin Seeds (Jeera)- 1 Tsp.
Nigella Seeds (Kalonji)- ½ Tsp.
Green Chillies- 2 No’s, Slit
Turmeric Powder (Haldi)- ¼ Tsp.
Kashmiri Red Chilli Powder (Kashmiri Kuti Lal Mirch)- ½ Tsp.
Red Chilli Powder (Kuti Lal Mirch)- ½ Tsp.
Coriander Powder (Kuta Dhaniya)- 1 Tsp.
Salt- To Taste
Tomatoes- 2 No’s, Finely Sliced

Dried Pomegranate Seeds Powder (Anardana)- 1 Tsp. (Optional) or Dried Mango Powder (Amchur)- 1 Tsp. (Optional)

Method:
Wash, Clean, Completely Dry with a Cloth, Trim both the Ends of Bhindi & Keep Aside
Heat Oil in a Wide Non Stick Skillet/Wok (Kadhai)
Add Jeera, Kalonji & Sauté till the Seeds start to Crackle & Flavours Release
Add Onions & Sauté till a Caramelized Golden Brown appears
Add Haldi, Kashmiri Red Chilli Powder, Red Chilli Powder, Coriander Powder & Sauté in Oil
Add Bhindi & Cook Uncovered on Slow Flame till it is Lighter Green & Tender
Sprinkle Salt after Bhindi is Semi Cooked
Add Tomatoes as the Bhindi turns Lighter Green in Colour & is almost Cooked
Sprinkle Anardana/Amchur Powder (As Per Taste)
Serve Hot with Phulka, Simple Dal Fry & Set Curd!

Tips:

So after tasting some Varieties of Bhindi Recipes with my Mom, Family & Friends, we found that as Tasty as Bhindi turns out, it does take a few Tips to get the Perfect Recipe!
For any Bhindi Recipe, make sure follow the Proper Method where the Bhindi is Washed, Cleaned, Completely Dried with a Cloth (Bhindi needs to be Completely Dry before Cutting into Pieces or else the Cut Bhindi will be Sticky during Sauteing/Frying), Trimmed at both Ends

Avoid the Cover while Cooking Bhindi as it tends to get Sticky, rather Cook on Slow Flame for one of the Best Recipes!

Variations:
For authentic East Indian Style of Cooking, one of the Tempering used with Bhindi is 'Panch Phoran' or the mix of 5 Spices
Heat Oil, add Panch Phoran, Hing, next steps remain the same till the final stages when Amchur is added with few Pinches of Garam Masala is added
