Moment’s Falooda Mix





On one of those Grocery store trips in an unexpected corner of Reliance Fresh Store, I saw the Moment’s Falooda Rose Flavoured Mix. Rest of the 9 flavours available are Vanilla, Rajbhog, Butterscotch, Kesar, Pista, Sitafal, Chocolate, Mango, Strawberry & are a great addition as coolants in Summer


The actual preparation happens literally in few minutes with a great result!

One 200 Grams Packet Serves about 5-6 (this is based on the Packet Instructions but trust me it would eventually turn to be for may be about 4 to 5)
In 1 Litre of Milk, mix about a Glass of Water & bring to a boil
Add the whole pack of Falooda Mix & boil for 10-15 Minutes till the Mix thickens

Keep aside so that it reaches room Temperature after which Refrigerate to Chill
The Chilled Falooda is ready to be served!

Some of the Additional Toppings can be Ice Cream, Roasted Dry Fruits etc.

After this pack, we were not able to get another one soon but finally found luck with the Mango Flavour
I just wish this Falooda Mix is available at most stores in the South especially Chennai & Tamil Nadu

Persian Cuisine



Basmati Rice

Black Tea consumed with Sugar Cube in the mouth after every meal

Dried Figs (Shirazi Anjeer grown in Shraz, Iran are sweeter) soaked in Water or Milk & consumed in morning as Cereal or Snack


Dry Fruit especially Persian (Polloei Sultanas/Kismish are Sweet & Sour)


Kashk is a type of Yoghurt with Buttery Flavour used in Kashk e Badamjan

Barberry/Zereshk used widely in Zereshk Polow & is grown in the North West Frontier of Iran


Starters like Kebabs are adored 
some of the top Kebab makers are in great demand whose job is to Skewer the fine lean meat for Barg or Lamb fillet Kebab, Mould the minced Meat on a sword-like Skewer (soldiers used to put their Meat non their swords & put it on Fire) for Koobideh Kebab
Marinate the Meat and to cook up to 40 Kebabs at a time & also making sure they cook evenly and perfectly over Charcoal preferably or Gas
Kebab Barg Skewers are dipped in Mix of Saffron-Onion Juice Liquid before putting on the Grill


Persian meal is incomplete without a Soft Spongy Bread
Taftan Bread just like Naan made with Wholemeal, White Flour & sometimes Rye Flour is a must in every meal

Qormeh Sabzi is a Slow cooked dish with Duck & spices
Saute Onions Chopped in few Tbsp. of Ghee, Rich Flavor of Duck (famous in North West Region of Iran), pinch of Turmeric, Sealed Duck is Removed from Heat
In the Same Ghee, Add Fresh Herbs Chopped (Parsley Coriander Mint Leaves Herbs) Add Dried Fenugreek Leaves
Add the Sealed Duck back again, Chicken Stock/Plain Water, Dried Lime Smashed, Salt & Pepper, Boiled Red Kidney Beans
Cover & Simmer for 2 Hours on Slow Flame & served with Steamed Rice

Dizi is served in Tea Houses in a special Dizi/Container
Traditionally it was & still is a Labourer's High Calorie High Fat Meal
it has cooked Mixed Beans, Meat with Fat
the Smashed Dip is eaten with Bread, Onion, Fresh Mint Leaves etc. but the leftover Juices are also playfully eaten with soaked Bread served with hand smashed Beans in the container



Kaleh Pache is a Soup made up of clean Lamb’s/Sheep’s Head, Hooves, Feet and Brains  
most of the times the Skin, Tongue, Eyes are also added along with Salt, Lemon Juice, Cinnamon flavours

This dish is only served from around 3 AM until Dawn
 
Polow (eg. Zereshk Polow) is when rice is part of the dish and mixed with other things like a Biryani
There are special ways to steam the rice in Iran (with towels etc. to prevent any steam from escaping) but the ‘piece de resistance’ to any rice dish is the golden rice crust that’s created at the bottom of the pot called Tah-deeg/Tahdig (literally meaning ‘bottom of the pot’) is the Golden crust created at the bottom with the Sliced Potatoes & Butter while the Rice steams for the second time
Chelow means cooked Rice (either plain or with Saffron and Ghee)
Chelow Kebab is a Kebab (with either Meat, Chicken or Fish) on Rice

Rice is called the 'Pearls of Persian Cuisine' 


The Iranian taste buds are used to the Sweet and Sour flavours together so in Savoury dishes, Fresh/Dried Fruit like (Sultanas, Figs, Dried Limes, Lemon, Pomegranate) is added
This Cooking Technique can be tasted in the Slow Cooked Stews like ‘Khoresh’ (called the 'Heart and Soul of Iranian Cuisine') which are a Gentle Mix of either Meat (Beef/Lamb/Veal), Poultry (Chicken/Duck) or Fish with Vegetables, Herbs, Fresh/Dried Fruits, Beans, Grains & of course Nuts, so after long hours of Cooking this Rich Stew with different Taste & Textures is like Bliss in the Pot!

Iran’s Dry climate is great for the Livestock of Sheep and Goats, so Dry Cheeses and Rich Yoghurt are part of everyday Meal

One of the Favorite Ingredient is Yoghurt & Kashk (a By-product of Cheese making process like Whey) as most Homes prepare these & use in their Daily Dishes as well

Instant Kesar Shrikhand

Indian Egg less Sweets Special
Instant Kesar Shrikhand
Simple Sweetness

Ingredients:
Hung Curd- most of the Whey from the Curd drained out
Saffron (Kesar)-
Castor Sugar- 1 Tbsp.
Nuts (Slivered Almonds, Pistachios Finely Chopped)
Milk-

Method:
In a Sauce Pan, Heat some Milk & Add Saffron
Turn the Milk to Low Flame as soon as Boil starts
In a Mixing Bowl, Add Hung Curd, Sugar & Mix Well
Add Saffron infused Milk & Gently Fold it in the Curd till Creamy
Add the Nuts & Fold them well till the Mixture turns Fluffy
Pour the Shrikhand in to a Ceramic Ramekin Mould, Garnish with Almonds & Pistachios

Tips:
Few Techniques used in here are that of:
Making Hung Curd
Maturation of Flavours
Using Vegetables for Desserts
Concentration of Flavours
Caramelized Sugar

The Hung Curd Cheesecake ends up with a Hint of Sourness, Fluffy Texture & no Calories of Cheese!
Keep the Saffron in Airtight Container & in the Fridge as it may lose its Aroma if exposed to Sunlight, Heat or Air

Homemade Fresh Gulab Jamun

Indian Egg less Sweets Special
Homemade Fresh Gulab Jamun
Classic Soul Food & Old Favorites!
Serves 3-4

Ingredients:
Milk Solids (Khoya/Mawa)-
All Purpose Flour (Maida)-

For Sugar Syrup:
Water-
Sugar-
Saffron-

Method:
In a Bowl, Combine the Khoya with just about 2-3 Tbsp. of the Flour
So we are adding just some Starch to the Khoya to help it bind
Knead it just like the Roti Dough
Make small balls make sure the Gulab Jamun Balls have no cracks

In a Sauce pan, Boil Water & Sugar to make a Sugar Syrup
Add Saffron & Let it reduce after Adding Saffron
Heat Oil for Deep Frying
Gently glide the balls & deep fry till Golden Brown
Add the Deep Fried Gulab Jamun Balls in the Sugar Syrup

Tips:
One of the Main Technique used in making Gulab Jamuns is that of Deep Frying & has to be learned gradually (so let’s try & get less cuts & burns on our hands every time) :)!!

Rice Pudding Cooked with Jaggery and Coconut Milk (Aathu Akkaravadisal)

Traditional Indian Festive Offering!
Indian Vegetarian Festive Season Special
Tamil Nadu/Andhra Cuisine

Rice Pudding Cooked with Jaggery and Coconut Milk (Aathu Akkaravadisal)
Serves 4
Ingredients:
Rice- ½ Cup
Milk- 1 Litre
Jaggery (Gud)- 1-½ Cups
Saffron (Kesar)- a Few Strands
Green Cardamom - 1 Tsp., Finely Powdered
Coconut Milk- ½ Cup
Pure Ghee- 1 Tbsp.
Raisins- 1 Tbsp.
Cashew nuts- 8-10

Method:
Rice should be Soaked for 30 Minutes to 1 Hour
Finely Chop the Cashew nuts & Keep Aside
Soak Kesar Strands in 1 Tbsp. of Warm Milk
Boil Milk in a Thick Bottomed Pot
Add the Rice and Keep Stirring
Check to see till the Rice is completely cooked & the Mixture becomes a little thicker
Remove the Mixture from the Heat
Slightly Mash with a Ladle
In a Sauce Pan, Add Jaggery & Stir on Low Heat
Stir Continuously till the Jaggery Melts
Add Saffron and Cardamom Powder and Mix Well
Remove from the Heat Again
Add Coconut Milk and Mix Well
Lastly, Heat Ghee in a Small Tempering (Tadka) Pan to fry the Raisins & Cashew nuts till Golden Colour, the Raisins Puff a little & Release Pleasant Aroma
Add to the Rice-Dal Mixture & Mix Well
Serve Hot!

Tips:

This Festive Preparation is Tamil Nadu Iyengar (Vaishnavite) Community’s Special mostly served in Temple as Offering to the God (Naivedyam/Prasad)
A Thick Deep Bottomed Bronze Vessel (Vengalapanai) would be perfect to prepare this Dish
Rice-Dal Ratio should be 1:6 & Jaggery should be 1- ½ Times the Rice-Dal Mixture
Be Careful not to let the Milk Stick to the Bottom of the Pot as in this Dish the Burnt part of the Milk should be avoided

Variations:
Addition of 2 Tbsp. Split Green Gram (Payattham Paruppu/Pesara Pappu) along with Rice gives a Pongal- like taste in this Recipe
Next Pressure Cook Rice, Payattham Paruppu, Milk, Water & Let it Cook till the Rice-Dal Mixture forms an overcooked Texture
Can add a Pinch of Camphor in this Recipe

Yellow Split Lentil Sweet Confection (Dhuli Moong Dal Barfi)

Indian Festive Season Special!
Indian Vegetarian Dessert Special
Yellow Split Lentil Sweet Confection (Dhuli Moong Dal Barfi)
Traditional Indian Sweets! 
Serves 4

Ingredients:
Split Yellow Lentil (De Skinned & Washed Green Gram) (Dhuli Moong Dal)- 250 Gms.
Dried Condensed Milk (Khoya)- 125 Gms.
Almonds- 3 Tbsp or 50 Gms.
Saffron- 1/4 Tsp.
Fresh Milk- 1 Tsp.
Clarified Butter (Ghee)- 250 Gms.
Cardamon Powder (Elaichi)- 1/4 Tsp.
Yellow Food Color- A Few Drops
Water- 2 Cups
Granulated Sugar- 1.6 Cups or 300 Gms.

Method:
Wash, Soak in Water for 4 Hours & Drain the Moong Dal.
Grind till Fine using Minimal Water. Set Aside
Roast the Khoya till Light Brown & Crumbly. Cool & Set Aside
Grind the Almonds & Set Aside
Heat Half of the Ghee in a Heavy Bottomed Saucepan on Low Flame
Add the Dal Paste, Stir & Cook till Light Brown & Aroma releases. Remove from Heat
Pour Water into a Large Vessel. Add Sugar & Boil till the Solution forms a Soft Ball when dropped on a cold surface
Add the Soaked Saffron. Stir & Pour into the Dal Mixture. Stir Gently
Pour this Mixture onto a Greased Tray. Set Aside to Col at Room Temperature
Cut into Squares & Serve Cold

Store in an Airtight Container

Sindhi/Baluchi Cuisine 


The Fertile Valleys & the Sea of Sind province; to Pastoral Baluchistan, from neighboring Iran; to the Punjab with its Five Rivers and the Rugged North West Frontier, home of the Chappli Kebabs
Indian Cooking Style along with Middle Eastern Techniques, Pakistani Cuisine is more of Meat Based compared to Indian Cuisine which is Vegetable Based

Ghee has a Higher Burning Point which leads to more flavours being released from the Spices & is essential along with Mustard Oil 

Buy Small quantities of the Spices to retain the flavours like Coriander Seeds & Powder, Cumin Seeds & Powder, Red Chillies like Kashmiri give subtle flavour, Crushed Chilli Seeds, Cloves, Green & Black Cardamom, Garam Masala, Dried Plums, Saffron, Dried & Whole Pomegranate Seeds
 

A Deep Clay Oven Tandoor is an essential part of the Pakistani Cuisine even now as it had originated here
The Intense Heat in the Middle is best to Cook any Meat, Seafood, Vegetables etc while the Sides of the Oven are utilized to Cook the Breads
The Bread that comes out of the Tandoor is Crispy on Bottom & Soft on the Top
The Unleavened Water Based Bread is called Roti & the Leavened Yeast Based Bread is called Naan which has Milk/Yoghurt added to give a Richer Consistency

Interestingly, Food Wise the Pakistani People are divided into two Groups, those who like Bread and/or Rice with their Meal & those who like Delicious Rice with the Meal
Almost every Pakistani likes to have a Sweet Ending to their Meal like Sugar Coated Fennel Seeds, Halwa, Jalebi etc.
Few Starters in the Cuisine are Given Below:

Recipe for Tandoori Paneer/ Tandoori Assorted Vegetables
Method:
In Plain Yoghurt, Mix Ginger Paste Garlic Paste Tandoori Paste Curry Powder Cumin Seeds Coriander Powder just little Garam Masala Salt Red Chillies Flakes Turmeric Mix Well
Mix with Hands & for the Mixture to fully Marinates through into the Paneer/Vegetables
The Secret to a Great Tandoor Recipe is the Right Blend of Spices 

The Food from the Remote North-West frontier of Pakistan especially the Baluchistan & Sindh Province is yet to be untapped
Traditional Pakistani/Afghani Dumplings (Mantu)
These are Easy to prepare and Enjoyed by one & all!

Method:
In Vegetable Oil/Ghee, Add the Minced Paneer/Vegetables & Saute
After the Water is reduced, Add Chopped Onions, Garlic, Coriander Powder, Cumin Powder, Chilli Powder & Saute
The Spices need to Cook to avoid the Raw Taste, Set Aside to Cool when done
On a Single Wonton Wrapper, Put a Spoonful of Filling in the Middle, Moisten the ends with Water changes Color, Fold the Opposite sides Press Gently to Seal, the Top needs to be as thin as possible
Steam for about 15 Minutes till the Pastry becomes Translucent
Garnish with Plain Yoghurt & Sprinkle with Fresh Chopped Coriander


Clarified Butter (Ghee):
To make Ghee, gently melt Unsalted Butter on Low Heat
After time the Butter will form Three different Layers- the Foam on Top (which is skimmed off and discarded), the Milk Solids (which will Sink to the bottom) & the Ghee will be left in the Middle

Christmas Plum Pudding

Winter, Christmas & New Year- Festive Season Baking Special
Original Christmas Plum Pudding
Serves 4-6

1st Stage Ingredients:
Star Anise- 2 No’s
Cinnamon Sticks- 1 Inch
Prunes- 1 Cup, Finely Chopped
Cranberries- 1 Cup, Finely Chopped
Fruit Peels (Sweet Lime, Oranges) - 100 Grams
Cherries- 1 Cup, Finely Chopped
Pure Vanilla Essence- 1 Tsp.
Dark Rum- 1 Cup
Brandy- 1 Cup
Fruit Juice (Apple/Orange/Grape Juice) - 2 Cup
Raisins (Kismis)- 2 Cup

2nd Stage Ingredients:
All Purpose Flour- 2 Cup
Baking Powder- 1 Tsp.
Nutmeg Powder (Kuta Jaiphal)- ½ Tsp.
All Spice Powder (Kebab Cheeni)- ¼ Tsp.
Cinnamon Powder (Kuti Dalchini)- ½ Tsp.

3rd Stage Ingredients:
Butter- 1 Cup
Brown Sugar- 1 Cup
Pure Vanilla Extract - 1 Tsp.
Eggs- 6 Nos.
Silver Foil/Parchment Paper/Baking Paper- To Cover
Water- As Needed For Water Bath
Amul Fresh Cream- 2 Big Cups
Sugar- 4 Tbsp.
Saffron- 1 Tsp.
Brandy- 60 Ml.

1st Stage Method:
In a Bowl, Add Star Anise, Cinnamon Sticks, Prunes, Cranberries, Fruit Peels, Cherries, Vanilla Essence, Dark Rum, Brandy and Mix Well
Fruits especially Raisins Absorb most of the Alcohol
Mix the Fruits in Clockwise, Anti Clockwise and Clockwise direction. Mix & Turn the Spoon in 3 Times Total
Cover and keep the Mix refrigerated for at least 3 days

2nd Stage Method:
This is the Step to Mix in All the Dry Ingredients
So at First we start with All Purpose Flour in a Sieve and Mix in the Powdered Spices. Gently Sieve all and Keep Aside

3rd Stage Method:
Now would be the time to Whisk in the Butter & Brown Sugar to a Liquid Consistency
Mix in the Dry Ingredients, Carefully Fold Only in 1 direction
Mix in the Soaked Fruits-Spice Mix & Fold Well
The Batter Consistency should be a Wet & Sticky like a Cake Batter which would be Crucial as the Pudding can Either be Steamed in a Steamer or Make a Water Bath and Put it in the Oven
Grease the Cup with Melted Butter, Pour the Plum Batter with a Spoon and Settle the Batter down by Gently Patting down on Hands  
Cover the Cup with a Silver Foil/Parchment Paper/Baking Paper

For a Water Bath:
Add Water in 2 Aluminium Baking Vessel (Cover it just less than an Inch)
Preheat the Oven at about 150 Degree C
Put the Pudding Cups in it and let them Steam in the Water Bath in the Oven till 1 Hour

For Saffron Cream Sauce:
In a Pan Boil Cream, Sugar, Saffron and Brandy on a Low Flame till about 2-3 Minutes till it becomes a Thick Sauce-like Consistency
Keep the Sauce Aside

Check the Pudding, When done Invert it on a Serving Plate and Top it with Saffron Cream Sauce
Serve it Warm with Lots of Love just like All Our Christmas Wishes!!

Tips:
Let’s go back & rewind few decades back in the Western World, the Expensive Spices especially the Sweet Spices used in this Recipe was affordable just for few Festive Occasions So this Pudding was one of the highly awaited Dishes by the Family & became one of the Signature Christmas Recipes!
All Spice Powder includes a mix of Clove, Cinnamon, Nutmeg & Bayleaf
Prunes are Sweetened Plums just like Raisins are Sweetened Grapes!
For a Non Alcoholic Recipe- The Fruit-Spice Mix can be soaked in Fruit Juice (Apple/Orange/Grape Juice)
Raisins always absorb a lot of the Alcohol so we Add it in the end


Traditionally the Pudding was made 4 or 5 Weeks before Christmas
The Age Old belief is that while making a Plum Pudding, generally people especially every Child in the Home makes a wish & it will be granted. For the same, Mix the Fruits in Clockwise, Anti Clockwise and Clockwise direction again by turning the Ladle in same direction 3 times & don’t forget to Make a Wish!
Always mix your Dry Ingredients first while preparing for a Cake/Pudding
The Butter should always be at Room Temperature
Instead of Brown Sugar, Regular White Sugar can also be used in this Recipe
Folding in one direction is the Most Important, as the Cake/Pudding Rises Very Well this Way!



Variation:
Another Version of this Yummy Pudding is with the below Ingredients:
All Purpose Flour- ¾ Cup
Salt- A pinch
Bread Crumbs- 3/4 Cup
Butter- 4 Tbsp.
Cinnamon - ½ Tsp., Powdered
Nutmeg- ½ Tsp., Powdered
Mace- 1/2 Tsp., Powdered
Fresh Lemon - ½ Tsp. Rind Grated
Brown Sugar- ½ Cup
Raisins- 1 Cup
Cherries- ¼ Cup
Lemon Peel- ¼ Cup, Finely Chopped
Almonds- ¼ Cup, Blanched, Peeled & Chopped
Carrot- ½ Cup, Peeled & Finely Chopped
Eggs- 3, Lightly Beaten
Orange Juice- ½ Cup
Sherry- 2 Tbsp.

Method:
Put the All Purpose Flour in a Sieve with Salt. Gently Sieve both and Keep Aside
Mix Breadcrumbs in with the Flour
Add the Butter in the Flour-Breadcrumb mixture
Add Lemon Rind, Sugar, Powdered Spices. Dried Fruits, Fresh Peel and Nuts
Add Eggs, Carrot and Orange Juice
Add Sherry and let the Mixture to soak Covered Overnight
The Following Day, next Step would be to Transfer the Soaked Pudding Batter into 2 Moulds
Cover with Grease Proof Paper, Foil and Steam in a Double Boiler Continuously for 7 Hours at a Steady Temperature
Check to see if the Pudding is Done
Cover & Keep it Overnight to Cool
Reheat for a Minimum of 2 Hours just before Serving
Optionally can use Golden Sultanas (these are Dried Seedless White Pale Green Grapes) ½ Cup & 2 Tbsp. Of Rum
For Baking, any desired Ceramic/Glass/Aluminum/Silicon mould can be used

Spain & Spanish Cuisine

Some of the Essentials are:
The Food is made with a particular speed, the presentation, Saffron, Paprika, real Strong flavours are used!
Aceite de Olive is one of the essentials which is bit more Fruity Version of the Regular Olive Oil is used very liberally in the Cuisine
Bread (Pan) is a staple in Spain & is usually eaten at every meal. What Rice is to Asians, Bread is to Spanish so no part of the Bread is wasted!
Cheese (Queso)
Saffron (Azafrán) is one of the main Spice & Flavouring agents
